I’ve had quite a few direct messages recently asking how it is I am able to stick with a meal plan, week in and week out. It’s a good question and if I’m being totally honest, there are definitely times when I feel like just saying the hell with it all. But, what’s the alternative? Eating out every night? Going to the grocery store every day after work? Asking the age old “what do you want to eat for dinner” question over and over and over again? Ordering pizza or carry out? None of these options are good for my health, my sanity or my wallet. I’m able to stick with this whole meal planning thing because it works – it keeps my family fed, my health in check and my wallet a little less empty.
Sunday, December 8th – Instant Pot Chicken Stew – I have leftover chicken stock from cooking chicken thighs in the instant pot so I’m making chicken stew. Loaded with veggies, chicken and potatoes, this is the perfect comfort food dish. Light the fire, turn on the Christmas tree lights and enjoy! Monday, December 9th – Easy Ground Turkey Curry – I love the flavors of curry but these dishes are usually accompanied by lots of calories. Not this recipe. Light coconut milk and lean ground turkey help to make this low cal.
Tuesday, December 10th – Salmon Cakes – Today is Ava’s 10th birthday! Her golden birthday ~ 10 on the 10th. I asked her what she wanted to eat for her bday dinner and she said salmon cakes and french fries. Sounds good to me. P.S. – at her age I would have requested Burger King. We aren’t quite sure where she gets her palette from!!
Keto Friendly Salmon Cakes
Ingredients
- 2 cans boneless & skinless salmon 5 oz each
- 1/2 cup panko breadcrumbs or almond flour for keto friendly if your cakes are still really wet, add another 1/4 cup but 1/2 cup works for me!
- 2 eggs lightly beaten
- 1/4 cup parsley, chopped
- 1/4 cup fresh dill, chopped
- 2 tbsp mayonnaise
- 1 tbsp dijon mustard
- 1 tbsp lemon juice
- 1 salt & pepper to taste
- 1/2 onion, chopped
Greek Yogurt Siracha
- non fat greek yogurt or sour cream for keto friendly
- 2 tbsp siracha
Instructions
- Drain the salmon and flake with a fork.
- In a large bowl, combine the salmon, parsley, dill, onion, panko or almond flour, eggs, mayonnaise, dijon mustard, lemon juice, salt and pepper. Form into patties – about a 1/4 cup per patty. Transfer to a plate and refrigerate for thirty minutes (10 minutes will help if you don't have more time)
- Remove from fridge. Heat a few tablespoons of olive oil on medium heat. Once hot, cook patties for about 4 minutes per side. Top with greek yogurt or sour cream, drizzled with siracha.
Wednesday, December 11th – Pasta with Butternut Squash & Sausage – This is one of my favorite winter recipes. It’s so creamy, decadent and healthy. Your kids will not even notice the squash – seriously. Use frozen squash if you aren’t up for peeling & dicing.
Thursday, December 12th – Everything Bagel Chicken Tenders – Family favorite right here. Serve with a side salad and you are done!
Friday, December 13th – Slow Cooker Chicken Burrito Bowls – It’s been a while since I’ve shared a crockpot meal. The thought of walking into the door next Friday with this yumminess cooked and reedy to serve gets me giddy!
