This past Sunday I was finally able to place an online grocery order – my first since March 15th! Some of you might be thinking, “big whoop” but for those of you who rely on the online shopping tool, you get me. Not having to spend 1.5 hours, going up and down the grocery aisles the WRONG way was pure heaven; not to mention the extra money I saved not picking up every random item in the store. Can I just touch on that real quick – the new “one way” aisle? I get we need to implement new directives for social distancing purposes but can we give each other a minute to get accustomed? Do you know how hard it is to focus on what direction you should be going, down an aisle, when you are trying to cross off sixty items on your list? It’s not easy! The glares I’ve received have been just shy of death threats! My shopping anxiety has been thru the roof. Thankfully, that’s behind me because online grocery shopping slots have opened up. You may need to allow 24 hours for a pick-up so plan accordingly!!
Last week I was super salad heavy – so sorry! I didn’t even realize it until I was on my fourth night of cooking & eating salads! But, to quote Patrick – “these salads don’t taste like salads because they have real food in them.” Not quite sure I get it but he was happy and I was able to re-set. Win, win. This week is going to be short and to the point because the Duffy clan is jumping on the boat to have some fun in the sun. I hope y’all find something enjoyable to do with your sweet families this weekend!!
Sunday, May 3rd // Cheesy Bacon Chicken Stuffed Shells // I’m trying to make up for all of the salads!! Normally I stay away from recipes where you have to stuff shells because it seems tedious and time consuming. But, this guy calls for a rotisserie chicken which makes the process so much more manageable. Plus it’s pasta. And bacon. And cheese.
Monday, May 4th // Roasted Garlic, Potatoes, Asparagus & Sausage Sheet Pan // I dig sheet pan recipes, especially when they call for sausage because my kids love sausage. And they will tolerate potatoes as long as I mash them, once roasted, and top with some cheese!
Tuesday, May 5th // Mexican Street Corn Salad // Happy Cinco de Mayo! I love Mexican food and this easy, street corn salad is a perfect addition to any taco or nacho bar! Or, just toss in a protein and call it your dinner. Don’t forget to make my skinny margaritas – the most perfectly balanced concoction.
Wednesday, May 6th // Grilled Chicken and Asparagus Pesto Pasta // Store bought pesto makes this recipe come together in no time. If you aren’t up for grilling, just roast your asparagus in the oven!
Thursday, May 7th // Asian Beef with Mushrooms & Snow Peas // Sounds complicated but in reality this recipe only calls for a few, pantry staple ingredients, mushrooms, snow peas and sirloin steak. Serve over brown or cauliflower rice for less calories!
Friday, May 8th // Chicken Shawarma Nachos // Holy mother of all things delicious. This recipe is life. Yes, you do have to marinate the chicken (best if overnight) and make the salsa but it’s not complicated – just takes a wee bit of time. But trust me, you want to make these nachos.
