My meal plan is being delivered to your inbox a little early this week because my family and I are going camping for the Memorial Day weekend. Yes, you read that correctly. Camping. The sleep in a tent, no bathroom, out in the wilderness kind of camping. Only the ground is sand, not dirt. It’s sort of awful but also pretty amazing at the same time. We count down the days until this trip with our friends every year. Last week we weren’t certain we were going to be able to camp with all of the COVID restrictions but the stars aligned and the beaches opened so roughing it here we come. And by roughing it I mean eating some of the best food of my life, sleeping on an air mattress under the stars, playing capture the flag until the kids fall asleep standing up and sitting on the beach for two days straight. But for real, there isn’t a bathroom so technically it’s still roughing it, right?
Sunday, May 24th // Skillet Chicken Tikka Masala Meatballs // OK so I went a little crazy in Costco last week and ended up purchasing a gazillion chicken meatballs. (If you follow me on Instagram, you’ve seen my meatball lunches everyday this past week!) I don’t even know what flavor they are but it doesn’t matter. I’m using them in this dish. The flavors in the sauce will drown out whatever is in my pre-cooked meatballs and it will be delicious. My suggestion – just purchase the pre-made chicken ones from your local grocer and call it a day.
Monday, May 25th // Grilled Hamburgers & Hotdogs with Israeli Couscous and Orzo Pasta Salad // Surely you are grilling at home this Memorial Day or you are going to a friend’s house and they are grilling for you. Regardless, you will need to make a side. Enter my favorite couscous salad. The key is not, I repeat NOT, cooking the corn. Just cut it off the cob and you are done. It’s amazing.
Tuesday, May 26th // Greek Chicken Topped Salad // Don’t go skipping this recipe thinking it’s just another, run of the mill, grilled chicken salad. Negative. I promise this salad is crave able – yes, that’s a thing. Make sure to add fresh dill and skip the ciabatta if you are looking to cut calories.
Wednesday, May 27th // Healthier Baked Eggplant Parmesan // This isn’t a typical “duffy dish” because honestly, dealing with eggplant is a pain in my arse. But, it’s COVID and we have extra time. And, let’s be real – anything covered in cheese and sauce is worth it.
Thursday, May 28th // Instant Pot Steak Fajita Bowls // It’s been a minute since I pulled out my instant pot and I have about fifty mini cups of Costco guacamole in my fridge so instant pot steak fajita bowls it is. Have y’all tried the guac cups from Costco? Legit!
Friday, May 29th // One Pot Lemon, Basil, Asparagus and Sausage Pasta // Chicken sausage paired with an apple cider based pesto makes this one of my favorite spring pasta dishes. Use regular chicken sausage if serving to the kiddos.
