When I sat down to plan out this week’s meal plan I had an ulterior motive – to use up every item in my freezer. We have had an annoying fridge leak for quite some time ( years but who’s counting) and we haven’t dealt with it until today because dealing with it meant emptying out the entire fridge & freezer and that’s no easy task, especially after a very recent trip to Costco. So now I find myself moving all of the freezer food up to the fridge which means we need to consume a ton of chicken, random vegetables and some unidentifiable items we will just call “seasonings” this week. Side note – YouTube is amazing for appliance tutorials. I entered a very basic explanation of what I thought our leaky refrigerator problem was and voila, twenty different video options that walked us thru the process of how to fix our fridge. The appliance guy, who told us it was a completely different issue, was going to charge us $500 and my guess is our fridge would still be leaking. The YouTube version cost us nada – just a day without a fridge and now a meal plan full of freezer ingredients!
Sunday, May 31st | Tomato Pie with Simple Tossed Green Salad | Nothing says summer like juicy ripe tomatoes tucked into a warm pie shell, baked and topped with cheese. If you’ve never made a tomato pie, now is the time. Two Tips – you must use ripe tomatoes and you absolutely must let the tomatoes drain on a paper towel 30 minutes after slicing or else you will end up with a watery pie!
Monday, June 1st | Honey Garlic Chicken Stir-Fry | Zucchini and squash are so abundant and fresh right now it’s hard not to gravitate to recipes chalk full of them. The honey & soy sauce mix does a great job of covering up the “veggie” haters in your life!
Tuesday, June 2nd | The LA Chop Salad | Not the healthiest salad on the block but the recipe is straight out of the What’s Gaby Cooking ~ Eat What You Want cookbook and it looks freaking insanely delicious. Wednesday, June 3rd | Skinny Tuna Noodle Casserole | Cheap, light and kid friendly. 10 minute prep time but does cook for an hour so plan accordingly.
Thursday, June 4th | Crispy Baked Parmesan Chicken with Lemon Arugula | The secret to getting your baked chicken cripsy – a wire rack. A wire rack allows the hot air in your oven to circulate under and above your food resulting in perfectly crispy baked chicken. Kid Tip – No, most won’t eat the arugula but they will eat the crispy baked chicken. Serve with some fresh veggies and a dinner roll!
Friday, June 5th | Thai Inspired Ground Turkey Stir-Fry with Basil & Peppers |If you are new to cooking Thai food, this recipe is for you. Minimal ingredients and work resulting in lots of flavor. More sweet than spice so works for the littles too!
