Last weekend Regan proposed setting up a bake shop to try and make a little extra money to save for Hamilton tickets. Side note – she is obsessed with Hamilton. She’s watched the play eight times since it came out on Disney+ and she streams the Hamilton soundtrack 24 hours a day. After reading thru Regan’s very thorough “business plan” Patrick and I agreed she could move forward with her idea.
Fast forward a week and the child is making more money an hour than I do!! She has been inundated with orders for Reese’s ice-cream pies, chocolate cakes, gluten-free cupcakes – you name it, she’s baking it and loving every minute of it. At eleven she is so comfortable and confident in the kitchen and I absolutely adore watching her do her thing.
Unfortunately the constant baking hasn’t been great for my kitchen ( looks like a confetti explosion 24/7) or my keto lifestyle so I’m trying to reign it in with this week’s meal plan. Lots of chicken recipes so if you have the chance, scoot by Costco and stock up on their frozen organic breasts & thighs. You will save a pretty penny as organic chicken in your local grocer is a racket.
Meal Plan August 2nd – August 7th
Sunday, August 2nd | Pesto Caprese Panzanella Salad with Grilled Balsamic Chicken Thighs – If I had to pick a favorite salad, this panzanella guy would win. Panzanella is a Tuscan salad usually made with stale dry bread, juicy tomatoes and yummy olive oils. This particular recipe gets it’s flavor from the basil pesto & vinegar/tomato combo. Pair this salad with grilled chicken and you have the perfect summer meal. Kid Plate – Cut a few pieces of bread for the kids, serve with some plain cherry tomatoes, slices of mozzarella and grilled chicken.
Monday, August 3rd | Cilantro Lime Chicken and Potatoes| – Such a great weeknight recipe. I love the lime, potato mix – seems like it wouldn’t work but it’s fantastic. Keto Tip – remove the delicious potatoes and sub squash & zucchini!
Tuesday, August 4th | BLT Chicken Salad |The perfect meal prep recipe – the hardest step is cooking the bacon. Use a rotisserie chicken for even easier prep. Do you cook your bacon in the oven? If not, you should. Kid Plate – plain rotisserie chicken, bacon, raw carrots & ranch or you can make them a blt sammie with plain chicken on the side.
Wednesday, August 5th | BBQ Chicken Foil Packets | I foresee this becoming a weeknight staple for a lot of you. Frozen veggies placed on a piece of foil, topped with bbq brushed chicken, wrapped and grilled or baked. Keto Tip – use a low carb veggie mix!
Thursday, August 6th | Flank Steak Salad | Gorgonzola cheese, my favorite pickled red onions, sautéed veggies and flank steak so good you will forget this is technically a salad. Keto Tip – use a low carb pickled red onion recipe. Kid Plate – flank steak with basic side salad and dinner roll.
Friday, August 7th | Chicken and Avocado Tacos with Creamy Cilantro Sauce | Just your basic chicken taco recipe with an awesome creamy cilantro sauce!! Keto Tip – make it a salad!
