Happy New Year Friends! I’m not sure about y’all but I definitely need a re-set when it comes to what I’ve been feeding myself and my family these last few weeks. I’ve reached my limit on unstructured living – too much food, drink and not enough exercise. I’m thankful to all of you for allowing me some much needed time off but I’m ready to get back to creating healthy, simple and family friendly meal plans.
This week I’m sharing six easy recipes that will help you ease back into your routines. Regardless if you plan to cook one night this week or all seven, having a plan will save you time, money and effort. I also suggest you take thirty minutes today or tomorrow and place an online grocery order for everything you need this week – dinner ingredients, kids snacks – all of it. I know it sounds daunting but I promise it will get easier the more you do it. Having all of your ingredients for the week on hand means no last minute grocery stops on your way home from work and no more asking yourself what you are going to go cook for dinner. Meal planning and online grocery ordering are the keys to stress free cooking! Sunday, January 3rd | Steak Frites | Total Time: 45 minutes | Not exactly healthy but I love eating a hearty meal on Sundays. Serve with a simple side salad for a well rounded supper!
Monday, January 4th | Creamy Tomato Artichoke Chicken | Total Time : 23 minutes | Only seven simple ingredients makes this such a great weeknight recipe. Serve over rice, cauliflower rice or over zucchini noodles. Don’t let the artichoke addition turn you off – your picky family members can eat around them! Tuesday, January 5th | Baked Pork Chop and Asparagus Sheet Pan|Total Time: 25 minutes | I know y’all love a sheet pan recipe as much as I do and this one will not disappoint. The mustard, mayo mixture keeps the pork chops from drying out while adding a ton of flavor. Omit the red pepper flakes if you are worried about the spice!
Wednesday, January 6th | Cheesy Bacon Ranch Chicken | Total Time: 35 minutes | Your pickiest of eaters will love this simple dish and you will love that it comes together in no time. I’m trying to get back on the keto band wagon and this is such a wonderful low carb option. Serve with roasted potatoes, veggies or a simple side salad.
Thursday, January 7th | Sausage and Peppers with Zucchini Noodles | Total Time: 45 minutes | Do yourself a favor this year and spend $10 on this spiralizer. While veggie noodles can never replace pasta noodles they are a much healthier option and so easy to make if you have the right gadget. KID TIP – only use sweet sausage and deconstruct this one. Serve the kids plain sausage (just don’t mix theirs back in at the end) with the tomato zucchini noodles.
Friday, January 8th | Chicken Sauté with Peppers and Goat Cheese | Total Time: 25 minutes | One of my all time favorites! You would never know this is a low calorie, Weight Watchers recipe. The creamy goat cheese mixed with the sweet peppers is a game changer!
