Weekly Meal Plan 3/28 – 4/2
Sunday, March 28th | Red Curry Risotto with Shrimp | Total Time: 45 minutes | Oh my gosh Oh my gosh Oh my gosh I LOVE this recipe. Technically it’s not a risotto because the base is jasmine rice – not Arborio – which means it’s not as temperamental and doesn’t require as much stirring. But the end result is similar – a creamy, flavorful bowl of deliciousness. Kid Tip: You can easily deconstruct this dish – just serve plain shrimp with a side of the rice which is sweet and creamy!
Monday, March 29th | Fajita Steak Salad with Cilantro Lime Vinaigrette | Total Time: 30 minutes | The ingredient list looks a little long but you probably have most of the rub ingredients on hand. Nothing crazy here but the cilantro lime vinaigrette is definitely worth making. Meal Prep: Make the dressing and rub on Sunday for a super quick Monday night dinner. Double the dressing to use on lunch salads for the week! Kid Tip: No, I don’t expect your picky eaters to eat the salad part of this recipe but they will eat the steak. Just serve with some raw veggies and a cheese stick and call it a day.
Tuesday, March 30th | Caprese Chicken with Roasted Asparagus | Total Time: 30 minutes | I’m obsessed with balsamic – I love the tartness. (Is tartness a word?) Pair the tart with the sweetness of the tomatoes and I’m in heaven. Serve with roasted asparagus.
Wednesday, March 31st | Sheet Pan Honey Mustard Pretzel Chicken with Potatoes | Total Time: 30 minutes | My friend Lauren has been sharing pretzel coated chicken recipes on her Instagram feed recently and I’m here for all of them. What’s not to love about honey mustard + pretzel crust + chicken. Your kids will LOVE this recipe.
Thursday, April 1st | Instant Pot BBQ Ribs with Green Beans | Total Time: 45 minutes | This is an oldie but my girls request it on the weekly. I’m always amazed at how tender the ribs are after such a short time! Make sure to follow along on my insta feed this week as I plan to do an instant pot tutorial!!
Friday, April 2nd | Salmon Cakes with Side Salad | Total Time: 25 minutes | I’m bias but these salmon cakes are legit. They come together in no time, are light & healthy and my kids love them. Win, win, winning. Perfect for Holy Friday! Video tutorial linked.
