Last week’s meal plan was so awesome that it lit a fire you know where to get to work on a “favorites meal plan” tab for my website; every single recipe was drool worthy. The tuna poke was by far my fav and I can’t wait to have another excuse to stop back into Cudaco for fresh fish. If you live in the Charleston area you absolutely must visit this incredible seafood house for fresh seafood or for lunch!
May is in FULL swing with Cinco de Mayo this Wednesday. Inspired by this festive holiday, I’m sharing a few of my favorite Mexican-American dishes on this week’s plan alongside some yummy family friendly recipes.
Meal Plan 5/2 – 5/7
Sunday, May 2nd | French Bread Pizza | Total Time: 35 minutes | Make Sunday supper super simple by letting your family top their own French bread pizzas! Get creative with your toppings!!
Monday, May 3rd | Brussels Sprout Salad with Creamy Cilantro Dressing | Total Time: 25 minutes | This no cook salad is perfect for a quick and healthy Monday. Add chicken (rotisserie or baked) or shrimp for a complete meal. Kid Plate: Plain chicken or shrimp, corn and a side of shaved brussels with ranch.
Tuesday, May 4th | Everything Bagel Salmon Sheet Pan | Total Time: 35 minutes | If you’ve never used Everything Bagel Spice, now is the time to start. It’s good on pretty much everything, especially this salmon dish. It used to be you could only find this addictive spice at Trader Joe’s but I noticed it in Harris Teeter the other day. Tip: Bake your potatoes at 410 for about ten minutes before lowering the temp and adding your salmon and green beans to the sheet pan.
Wednesday, May 5th | Baked Chicken Tacos | Total Time: 25 minutes | Celebrate Cinco de Mayo with this yummy baked chicken taco recipe. You can easily customize these tacos to appease even your pickiest of eaters. Use a rotisserie chicken to make this recipe even easier!
Thursday, May 6th | Grilled Pesto Turkey Burgers | Total Time: 25 minutes | Light but flavorful, these turkey burgers come together in no time for a quick family dinner. Kid Tip: omit the sundried tomatoes from a few patties if your kids won’t eat.
Friday, May 7th | Grilled Romaine Salad with Grilled Chicken | Total Time: 30 minutes | I’ve been eyeing this recipe for weeks and now that it’s warm outside I think it’s finally time to share. Grilled romaine topped with bacon, whole grain bread, pickled onions and a zesty lemon dressing. While the grill is hot, add your favorite protein to go along with!
