There’s not much more I love than picnic food, fireworks and the USofA which is why the 4th is understandably one of my favorite holidays. If I can find a recipe that matches the red, white and blue theme I’m a really happy camper! Like this insane Lemony Tart Regan and I made last week. I love anything lemon flavored but this tart by Pretty Simple Sweet is the ultimate lemon dessert. It does require a little hands on time but it’s totally worth it. We made the crust from scratch but you can purchase a pre-made tart crust if you are short on time. Top with strawberries, blueberries and whipped cream and you’ve got yourself the perfect patriotic dessert. Recipe below! Sunday, July 4th | My Favorite Salads | Greek Couscous Salad, Tortellini Salad, Cucumber & Tomato Salad |
Monday, July 5th | Healthy 20 Minute Korean Beef Bowl | Total Time: 20 minutes | Ground beef sautéed in sesame oil with fresh ginger and soy sauce (coconut aminos). Serve over jasmine or cauliflower rice or over lettuce or cooked veggies!
Tuesday, July 6th | Low Carb Tex Mex Chicken and Zucchini | Total Time: 35 minutes | A healthier spin on taco tuesday! Black beans, corn, chicken, bell peppers and zucchini all tossed with taco seasoning and cheese! Kid Tip – remove cooked veggies from skillet and cook chicken separately. Serve with taco shells or tortillas!
Wednesday, July 7th | Grilled Chicken Salad with Strawberries & Goat Cheese | Total Time: 20 minutes | This recipe calls for spinach but I prefer it over arugula. Meal Prep: Double for healthy work lunches! Kid Tip: deconstruct it! Plain chicken, strawberries and a cheese stick!
Thursday, July 8th | Garlic and Rosemary Balsamic Roasted Pork Tenderloin | Total Time: 1 hour 15 minutes | Balsamic is truly one of my favorite ingredients and it’s perfect on this pork tenderloin. Cook potatoes on the pan with the tenderloin for an easy one pan dinner! (potato recipe included)
Friday, July 9th | Summer Veggie Gnocchi Salad | Total Time: 40 minutes | Y’all know I like to end the week with a good grilling recipe so I can sit outside while Patrick does all of the work! Use up your grocer’s local produce in this one – zucchini, corn, squash – whatever you can find will work. Toss with the gnocchi, a balsamic dressing and you are done! Kid Tip – serve gnocchi with butter and parmesan and a side of grilled veggies!
