It’s officially October and in my book, that means soups, stews, and decorations galore for the foreseeable future. While I hate to see summer go, I do look forward to the celebratory seasons that kick off on October 1st. My house is fully decorated from Oct. 1st – Jan. 1st and it brings me so much joy! When do y’all start to decorate for the holidays?
I just realized this week’s plan is really chicken-heavy – my apologies. With chicken prices higher than usual, I suggest popping (yeah right) into Costco and purchasing chicken in bulk if you have the time. It will save your wallet.
Meal Plan 10/3 – 10/8
Sunday, October 3rd – Chicken Creole | Total Time 1 hour 15 minutes | – A spin-off of a southern favorite, I created this recipe with cooler weather in mind. Chicken thighs, bacon, veggies, tomatoes, and seasonings simmer together for the perfect bowl of comfort.
Monday, October 4th – Chicken Thighs Sheet Pan Dinner with Smashed Potatoes | Total Time: 35 minutes | Mondays are made for sheet pan recipes. Microwave the potatoes to soften, smash them, bake alongside the most perfectly seasoned chicken and add green beans. Already deconstructed for your picky eaters.
Tuesday, October 5th – Grilled Chicken with Avocado Salsa | Total Time: 25 minutes | Double this recipe for lunches or freeze cooked and cooled chicken breasts for a quick weeknight dinner! Chicken breasts are marinated in an easy lime vinaigrette, grilled, or cooked stove-top, and topped with yummy avocado salsa. Serve with Cilantro Lime & Black Bean Rice. Kid Tip – serve chicken without the salsa, favorite dippy sauce and a side of rice.
Wednesday, October 6th – Dijon Salmon and Asparagus | Total Time: 30 minutes | Another sheet pan favorite, this salmon recipe might be the easiest one I’ve ever come across and the one your children are most likely to eat. Salmon filets topped with salt, pepper, garlic cloves, and parmesan cheese. Roasted alongside asparagus for a one-and-done meal. Kid Tip: If your kids refuse to eat salmon ( I have one of those) toss some frozen fish sticks onto a sheet pan and call it a win.
Thursday, October 7th – Chicken Ceasar Pasta Salad | Total Time: 15 minutes | OK not sure why I haven’t ever thought of this before. Pasta + rotisserie chicken + all the yummy flavors of a Ceasar salad = food heaven. Kid Tip: this one is perfect for families – pull out plain pasta before mixing into Ceasar ingredients and toss with butter. Serve alongside a bacon salad and plain rotisserie chicken! (bacon is an ingredient in the Ceasar salad!)
Friday, October 8th – Rosemary Roasted Butternut Squash Pizza | Total Time: 55 minutes | OK OK so not your average DWTD recipe but y’all, this one is not just for foodies. The combo of roasted butternut squash, bacon, basil pesto, and cheese topped on top of a gussied up store-bought pizza dough is heaven on earth! Perfect for Friday pizza night!
