Citrus Salmon with Avocado and Corn Salsa

A simple rub gives this salmon just the right amount of flavor but the no cook corn and avocado salsa takes it over the top! Fresh summer corn doesn't need to be cooked and left alone creates the perfect combo of sweet and crunchy!

Ingredients

  • 1 lb. salmon, skin on
  • 1 tbsp. olive oil
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. chili powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. brown sugar
  • 1/4 tsp. ground cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp. fresh lime juice

For the Corn & Avocado Salsa

  • 2 corn on the cob, husked
  • 1 avocado
  • 1 pint cherub tomatoes, halved
  • 1 tbsp. fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp. fresh cilantro, chopped

Instructions

  • Pre-heat oven to 400. In a small bowl, combine seasonings for salmon. Set aside.
  • Spray baking sheet with non-stick spray. Place salmon, skin side down onto baking sheet. Rub salmon with 1 tbsp. olive oil, 1 tbsp. of lime juice and top with seasoning mixture - rub mixture into the salmon to make sure it's coated.
  • Bake salmon for 10 - 12 minutes until easily flaked with a fork. Set aside.
  • To make the salsa - cut corn off cob and place kernels into a bowl. Combine with halved cherub tomatoes, chopped avocado, lime juice, garlic, cilantro, salt and pepper.
  • Top salmon with salsa and serve!
