Thank you for being patient with me these past two weeks – life has definitely gotten in the way. I see blue skies ahead so hopefully from here on out it will be smooth sailing. (I’m pretty sure I just jinxed myself) I’ve received some awesome feedback from the DwtD community for new blog post ideas and I will be releasing all of the newness over the next few weeks so thank you! I can’t wait to chat about healthy, on the go, breakfast options, kitchen organization, grocery budgets, Costco hauls and more. As of today, I’m playing catch up so this post is short and sweet. I do want to leave a genius life saving hack, here, as I know it will help to calm the chaos.
Make a “communication station” on the back of your pantry or cabinet door. Grab some painters tape ( it won’t strip the paint or wood) and slap up any important info you need to reference daily, or weekly. In my family we have the school calendar, school lunch menu, will be soccer schedule and our sticky “out of” grocery list for the week. Make sure it’s in a spot the kids can reference – my girls always want to know what the hot lunch of the week. This “project” will take you all of two minutes and will keep you from feeling like you are losing your marbles M – F. Meal Plan For The Week Of 8/25
Sunday, August 25th – Simple Bolognese – Spaghetti is what Sunday Suppers are made of. Nothing screams family supper like spaghetti. It’s just a thing. Make some garlic bread (by make I mean purchase the frozen stuff), a simple salad and call it. Oh wait – you need wine.
Monday, August 26th – Skillet Lemon Pepper Chicken & Veggies – Not your typical “chicken and veg” recipe, y’all. Lemon, white wine, feta – so many good flavors for around 400 calories a serving. Kid Tip – Use vegetables your kids will eat. Don’t be scared to customize to your family’s liking. Truth is the veggies will be so cooked down they won’t really know what they are eating!!
Tuesday, August 27th – Instant Pot Garlic Parmesan Chicken Wings – Not sure about yours but my kids love tiny foods. If it’s tiny, there is like a 90% chance it will be devoured. Insert Chicken Wings. These guys cook for 6 minutes in the Instant Pot. Thank the Lord as I have a late work thing, and Regs has soccer, so I won’t be in the kitchen until after 6:30! Serve with something easy – corn, lima beans (I’m not above a frozen lima bean) or side salad.
Wednesday, August 28th – Zucchini Baked Ziti – I’m super stoked about this recipe. Ground beef, tomatoes, ricotta, mozzarella, basil, low calorie and low carb. What dreams are made of. Kid Tip – After you ground the beef and tomato mixture, put some aside. Serve over noodles with some cooked zucchini on the side.
Thursday, August 29th – Instant Pot Salsa Lime Chicken – The beginning of the end, y’all. Today marks the official start of football season in the Duffy Dome as it’s not officially football season until the Tigers play. And they play tonight. My door will be revolving so I’m making something easy for the masses. Frozen chicken breasts will cook for about 30 minutes. I’ll have taco shells out with all the fixins. Go Tigers!
Friday, August 30th – Ten Minute Pizza Zucchini Noodles with Marinara & Pepperoni – I know, it sounds odd but it’s delicious. Trust me. Kid Tip – grab some naan flatbread and build them a quick pizza with sauce, pepperoni and cheese. Bake at 400 degrees for 10 minutes.
