I’m always looking to spice up my lunch life which can be difficult when you are also trying to keep it light and simple. Insert this taco chicken salad. To keep it super simple, use a rotisserie chicken. Make on Sunday and you are good to go for the week!
Taco Chicken Salad

Ingredients
- 2 1/2 cups rotisserie chicken
- 1 1/2 cups of non-fat greek yogurt
- package of taco seasoning
- romaine lettuce, chopped
- 1/3 cup red onion
- 1/3 cup red bell pepper
- 1/2 cup tomatoes
- juice half a lime
- cilantro, jalapenos and green onion for garnish
Instructions
- Combine greek yogurt with package of taco seasoning. Chop red onion, bell pepper and tomatoes. Mix in the chicken and veggies. Squeeze lime, top with cilantro, jalapenos and green onion. Place over chopped romaine.
