I’m back! After a week or so of family, food and fun I’m super excited to jump back into Dinner With The Duffys and a brand new year of healthy meal planning. I’ll release my first plan of 2020 on Sunday but wanted to share my favorite go-to New Years appetizer just in case you are searching for something delicious. This Caesar Salad cup app is filling and can be served at room temp – aka, perfection.
Caesar Salad Phyllo Cups (Adapted from recipetineats)
One of my favorite appetizers, hands down. Theses caesar salad cups are bursting with flavor, travel well and can be served at room temp.

Ingredients
- 2 boxes frozen phyllo cups
- 5 oz romaine lettuce, chopped (you may not use it all)
- 1.5 cups rotisserie chicken finely chopped
- 8 strips bacon
- 4 tbsp freshly grated parmesan
Dressing
- 1 garlic clove
- 2 anchovy fillets
- 2 tbsp fresh lemon juice
- 1 tsp dijon mustard
- 1 tsp worcestershire sauce
- 1 cup mayonnaise
- 1/2 cup freshly grated parmesan cheese
- 1 – 2 tbsp whole milk, drizzled if needed
- 1/4 tsp salt
- 1.8 tsp black pepper
Instructions
- Bake phyllo cups as directed. Let cool
- Cook bacon. I like to cook my bacon in the oven at 375 degrees for about 15 minutes, flipping halfway. Set aside.
- Place all dressing ingredients, except for the milk, into a blender or food processor and pulse until smooth. If the dressing is too thick, add in one or two tablespoons of whole milk.
- Place chicken, bacon and lettuce in a bowl and mix with 8 tablespoons (or more if needed) of dressing. ( Lucky for you, there will be plenty of dressing
leftover) - Divide the salad, amongst the phyllo cups, sprinkle with fresh parmesan and serve!
