Y’all know I’m always mixing flavors, to create unique salads, to spice up my work lunch life. This concoction might be my new favorite. You only need to do a few things ahead of time – 1) make the boxed couscous 2) open a can of artichoke hearts then pour into a container for storing and 3) chop the remaining few ingredients. Then place in a container the morning of. My go-to salami is always Applegate Organic Salami – the best flavor and no antibiotics – EVER. Great for snacks, lunch and even dinner!
Easy Salami, Couscous Salad
Short on ingredients but not on flavor. This simple salad will spice up your work lunch life!
Ingredients
- 1 box plain couscous
- 1 container of cherub tomatoes
- 1 cucumber
- 4 oz salami
- 1 can artichoke hearts
- feta
- parsley
Instructions
- Cook couscous. Let cool. Chop cucumbers, tomatoes, artichokes and salami. Assemble in a container. Top with parsley, feta and lemony vinaigrette!

The perfect, simple, salad dressing. Goes with everything!

- 1/2 cup olive oil
- juice of one lemon
- 1 tsp dijon mustard
- salt & pepper
