I can’t quite kick my lunch salami obsession. And why should I? It’s delicious, comes pre-packaged, has a much longer shelf life than most deli meats and comes in a variety of options. My go to is @applegate genoa salami. For this week’s salad I’ve created a simple Italian chopped you can quickly prep and toss together in no time. I like to purchase romaine lettuce that comes in a plastic bin so I can chop it and then store it back in it’s original container. Just toss a paper towel on top to soak up the moisture. ( I loathe wilted lettuce) Linking out to my favorite Italian dressing. It makes a ton and will keep, covered, in the fridge for weeks.
Ingredients
- Applegate Genoa Salami
- Red onion
- Cherub tomatoes
- Boars Head Provolone
- Romaine
- Pepperoncini
Pre-chop and store your romaine back in it’s original container. Chop the remaining ingredients, store separately, and then toss with lettuce when you are ready to eat. Find my favorite Italian dressing here.
