Here we are heading into week two of being out of school, working from home and sheltering in place. Those of us with kids have quickly had to adapt to becoming full time teachers and short order cooks. While I can’t help you with the teaching, I can certainly help you with the cooking. This is the perfect time to get comfortable with planning your weekly meals and ordering your groceries online. Plus, it’s just good for your health – home shopping will limit your time spent in crowded grocery stores.
This week I’m putting more of a focus on family friendly meals and less on low calorie options. I’m not saying we are going to load up on pizza and junk but I feel it’s best to provide you with super easy recipes that require few ingredients, not a lot of time and very little focus. Most of the below are easy enough for your middle schooler to make, on their own, or you can get your littles involved! Cooking is a great educational activity for all age groups and Lord knows we all need stuff for our kids to do right now! Regan, Ava and I are planning to post a few “cooking with the kids” Instagram videos, a few times a week, so make sure to pop on over and follow along!! If nothing else, I’m certain they will provide some much needed entertainment.
Sunday, March 22nd // Lemon Ricotta Pasta with Peas // A few more ingredients than the rest of this week’s recipes but Sunday is still “Sunday Supper Night” so let’s make it delicious. PICKY EATER TIP // Most of the peas are pureed with the other ingredient so if your kids won’t eat peas you can totally disguise them – just don’t add the additional peas back into the pan!
Monday, March 23rd // Parmesan Crusted Chicken // Regan and Ava will definitely be prepping this one for me on Monday night. Serve with a side salad or your kids favorite veggie and you are done.
Tuesday, March 24th // Ground Turkey Sloppy Joes // Subbing ground turkey or chicken for fatty beef makes this a great low calorie, family friendly option. My kids love this recipe!
Wednesday, March 25th // Taco Pizza // Change it up and serve your taco meat on top of bread instead of inside shells! Sub ground chicken/turkey to lighten this one up!! Cook the meat ahead of time and let your kids assemble for dinner.
Thursday, March 26th // Buttermilk Roast Chicken with Garlic // Not sure what it is about chicken drumsticks but my kids love them and if I’m being honest, so do I. Marinate these guys in buttermilk, for 24 hours, then bake for about 30 minutes. Get ready to be wowed!! Serve with a side salad and roasted potatoes!
Friday, March 27th // Weight Watchers Goulash // I love this recipe and even better, my kids love this recipe. I omit the corn because, well, it just seems weird to add in corn, but you do you!!
