Three weeks into this home schooling, work from home adventure and I think we are finally getting the hang of it. The girls seem less bothered by not having anything to do and I feel like I’m finally starting to find my rhythm. This past week my creative juices were flowing and I found so much joy in the below:
90’s Rap Music – Why did I ever stop listening to 90’s rap. Probably the language but that’s what head phones are for. I dare you to turn up “no diggity, no doubt” and not dance. You’ll be swaying before you know it. I’m cleaning, exercising and working while listening to these old jams on the daily. I’ll share my favorites with y’all on Monday!
Drive-bys – Not the shooting kind, the social distancing one. When the kids start to lose their marbles, I toss them in the car and we go visit family and friends. I let them hang out the sun roof while they chat. My in-laws took it up a notch yesterday during our visit – they put on formal attire, had music playing and even did a few dances for our entertainment. Get creative – it seriously helps to see new faces!!
Cooking with the Kids – This is the perfect time to introduce cooking to your kids. It’s a fun, family friendly activity that will help even your pickiest of eaters try new foods. And maybe after the quarantine is lifted they can be responsible for cooking one meal a week!!
Happy Hour Zooms – Why did it take a quarantine to start zooming with friends and family? I’ve seen my out of town friends faces, and their children’s faces, more in the past week than I have in years. My girlfriends and I are shooting for twice a week. We grab a cocktail, click join and let the laughs commence. P.S. – they are going to kill me for sharing the below!
Sunday, April 5th // Creamy Beef & Shells // A step above hamburger helper in flavor but only a few additional ingredients. Such a comforting Sunday supper meal!
Monday, April 6th // Garlic Herb Salmon Bowls // Bowls are trendy for a reason – everything tastes better all mixed together. Unless you are a kid and prefer your food not to touch. Serve theirs as plates – not bowls – with everything separate.
Tuesday, April 7th // Mustard Roasted Chicken with Roasted Asparagus // Regan loves this dish y’all, which is saying a lot. It’s not complicated but it does require you to put in a wee bit of effort. You can do the following for less work – sub panko bread crumbs for home made and only use chicken breasts (cook time will change to 20 minutes).
Wednesday, April 8th // Cheesy Fajita Chicken Bake // A dump and bake here y’all. Your older kids will definitely be able to handle this one. Quick note – chicken always takes longer to cook when it’s topped and in a deeper dish.
Thursday, April 9th // Sous Vide Juicy Pork Tenderloin with Roasted Carrots // I did a review of the sous vide a year ago and while I don’t believe it saves you beau coups of time, I do believe it produces the most well cooked food. Period. That’s especially true when it comes to pork tenderloin. A few simple ingredients and 90 minutes of hands off cooking time will produce the most tender pork tenderloin you’ve ever put in your mouth. Roasted Carrots
Friday, April 10th // Chicken Sheet Pan Nachos // I put a version of these nachos on the meal plan recently but it’s such a easy, family friendly, option I just can’t get away from them. Great for lunch too!
