Last week Patrick, the girls and I were technically on spring break. The plan had been to head North to the Greystone Inn on Lake Toxaway but COVID so we had to come up with a plan B. I searched high and low for fun and safe outings during the current stay at home order and found two really great options that got us outside and kept us away from people.
First, we headed north to Brookgreen Gardens, a sculpture garden and wildlife preserve in Murrells Inlet, SC. The exhibits were closed but the zoo and grounds were open to the public. We spent hours walking thru the gardens, soaking up the sun and breathing in fresh air.
A few days later we went old school and visited the Hwy 21 Drive-In located in Beaufort, SC. Y’all, this was such a great experience. The drive in was showing a number of movies, on multiple screens, but we landed on Trolls World Tour. Because of COVID the concessions was closed so we packed our own snacks, drinks and dinner! The girls absolutely loved it. We put the seats down, opened the tailgate, snuggled under blankets and ate popcorn & candy under the stars. It was magical.
I actually preferred bringing our own food, especially for Patrick and myself. It didn’t hurt that I made and packed the most insanely delicious flank steak salad – EVER. Gorgonzola, pickled onions, sauteed peppers. I’ve been craving it every day since. Homemade “to-go” salads are an easy and healthy option, especially if you own a Rigwa bowl.
