Last week I took a week off from meal planning in order to clean out my freezer and give my wallet a break. These days I can’t seem to get out of the grocery store for less than $150 – doesn’t matter if I’m purchasing food for one night or four. So last Sunday I made the decision to only cook with food we already had in our pantry or freezer.
Luckily for my family we had a ridiculous amount of food in the freezer, most of which I had forgotten about. I ended up making sous vide pork tenderloin, salmon cakes, grilled fish tacos, turkey burgers and enchiladas. While I’m happy to have more space in my freezer, I’m ready to get back to a plan. Having to think about “what’s for dinner” every, single night is exhausting.
Sunday, April 26th // Skinnytaste Spring Asparagus Risotto // Not as heavy as most of our Sunday suppers but creamy and satisfying all the same.
Monday, April 27th // Grilled Chicken Kale Caesar Salad // I have been craving greens lately. Not going into work means I’m not eating as many salads for lunch so I’ve decided to add them in for dinner. I shared this recipe last April and I’m sharing it again because it’s so damn good. The lighter, greek yogurt lime dressing is out of this world. Add your favorite protein and enjoy.
Tuesday, April 28th // Chicken Zucchini Casserole // A simple, family friendly, crowd pleasing veggie casserole. I’m going to sub two squash for two of the zucchini for added flavor and color.
Wednesday, April 29th // Chopped Turkey Burger Salad // Another one of my salad favorites. Even the “salad haters” in your house will enjoy this recipe. Sub non fat greek yogurt for mayo if you are looking to lighten this one up even more. KID TIP – Serve your kids a turkey burger wrap – add the meat and toppings into a pita or tortilla!
Thursday, April 30th // Grilled Vegetable Salad // Grilled veggies, goat cheese and pesto – what could be better? Sub in your favorite vegetables or whatever fresh ones you have on hand.
Friday, May 1st // Caprese Grilled Chicken Salad // Fresh caprese might just be one of my favorite dishes on the planet. This salad gives you all of the same flavors and more by adding in bacon and tangy grilled chicken.
