Growing up, I loathed “chicken for dinner” nights. The chicken was always dry, tasteless and hard to chew. Nothing like eating a piece of meat, devoid of any juice or flavor. And it wasn’t my mom’s fault – chicken is just really hard to cook well.
But somehow, along the way, I mastered the art of cooking chicken breasts. It might be the only thing I’m really good at so I’m cool with patting myself on the back for this one. The key to cooking the perfect chicken breast is to sear both sides on high-ish heat, 3 – 4 minutes per side. As soon as both sides are browned quickly turn the heat down to low (when I say “low” here I mean the lowest setting on your stove) and cover the pan BUT leave the lid a little cockeyed so some heat can escape. So why all of the chicken chatter? Because, this week’s meal plan is a full week of chicken dishes – cooked all kinds of delicious ways of course. I promise you won’t feel like you are eating the same dish, night after night with the recipes I’m sharing. And you should save a few pennies on your grocery bill because chicken is less expensive than other cuts of meat. TIP – purchase your organic chicken from Costco. So much cheaper!

Monday, May 18th // Easy Alice Springs Chicken // An Outback Steakhouse knock off, this family favorite chicken dish is bursting with flavor. Honey mustard, bacon and cheese baked in one dish for under 350 calories a serving. Um, yes please. Serve with a side salad and you are done.
Tuesday, May 19th // One Skillet Cheesy Cuban Skillet // Comfort food without the calories. Well, sort of. Broken pasta noodles and rice soak up all of the spices making this more of a pilaf dish. Top with lime, cilantro and avocado!
Wednesday, May 20th // Sheet Pan Bruschetta Chicken // A one pan wonder y’all. The chicken is baked alongside some baby potatoes and then topped with fresh mozzarella and a tangy bruschetta.
Thursday, May 21st // Sweet Chili Chicken with Spring Quinoa Salad // I’m already drooling just thinking about these two dishes. Tangy grilled chicken paired with a pea & feta quinoa salad. Sub chicken thighs if you are looking for even more flavor!
Friday, May 22nd // Paprika Chicken Stew // Who said you can only eat stew in the winter? Not me! This Hungarian inspired dish is super light and made using mostly ingredients you have in your pantry!
