If you followed along with last week’s meal plan you know I made a decision to try the keto diet. I’m six days in and while there have been some major learning curves, I’m starting to see results and my sugar/carb cravings have begun to subside.
I’m going to re-cap my first keto week for you guys on Monday, full of everything I’ve learned, tips/tricks/apps etc. It’s amazing how far I’ve come in seven days and how difficult keto can be if you don’t do your research before you dive in! This week I promised I wouldn’t do a keto only meal plan but that instead I would offer suggestions on how to take any recipe and make it keto friendly.
Sunday, June 21st | Father’s Day Quiche | We have a cook out to attend later in the day so we will be celebrating Patrick in the AM with breakfast in bed. Quiche is such a great hands on kid friendly option. My problem is whether I should make the Crab, Old Bay & Gruyere version or the Bacon, White Cheddar & Scallion quiche. Both, and more, are shared on the site. If I was making this as is, I would use a store bought pie crust. TO MAKE THIS KETO – make an almond flour crust. All ingredients listed are keto friendly!
Monday, June 22nd | Creamy Tuscan Shrimp | I like adding shrimp to the meal plan on Mondays because A) shrimp go bad quickly and B) you have more time on Sunday to peel and prep these suckers which makes for a quick Monday night meal. TO MAKE THIS KETO FRIENDLY – sub almond flour and watch the addition of sundried tomatoes – lots of carbs. Add cherry tomatoes and cook down for less.
Tuesday, June 23rd | Balsamic Steak Gorgonzola Salad with Grilled Corn| This salad screams summer to me. Perfectly grilled sirloin steak, zesty gremolata (gremolata is just a fancy word for a bunch of herbs mixed with lemon zest) and grilled corn make this anything but a boring salad. TO MAKE THIS KETO – Omit the corn (stinks), sub coconut aminos for Worcestershire & limit the red onion.
Wednesday, June 24th| Green Chile Chicken | Yes, this is actually a keto recipe but it’s so easy and kid friendly it would be a shame not to add to the meal plan. I’m assigning this recipe to Regan to whip up on Wednesday. It’s that simple. Serve over regular rice or cauliflower if keto!
Thursday, June 25th | Lasagna Stuffed Peppers | OK so it’s hard to stay away from the keto recipes but this one is again, really family friendly and so low in calories per serving. KID TIP – My girls will not eat the bell pepper, but will love the guts, so I will just un-stuff theirs before plating!
Friday, June 26th | Cilantro Lime Chicken | A friend of mine asked for non – casserole keto friendly options. While this isn’t a keto recipe, it is keto friendly and not full of cheese. Serve alongside your favorite veg or simple side salad for a quick Friday night meal. MEAL PREP TIP – this would make for great weekday lunches. Marinate and cook on Sunday for easy taco salad yumminess!
