Recently I’ve been fielding lots of community questions (which I LOVE) concerning what exactly I eat everyday on the keto diet. More specifically, am I only eating meat and cheese? A quick look back at my recent meal plans and I can see why some of you would believe this to be the case.
While meat and cheese are definitely keto staples, they are not the only options available to you – lighter proteins do exist. Case and point, seafood. Most seafoods contain little to no carbohydrates, are really high in vitamins, minerals and omega-3s. To prove to y’all keto is more than just beef and cheese, this week I’m sharing six seafood recipes that are easy to make, absolutely delicious and won’t break the bank. Regardless of whether you are following a low carb, keto lifestyle, I promise you will love these recipes. As is with most “healthy” foods, seafood can be a little pricey but I’ve made sure to include tips on where to purchase your seafood for less without sacrificing quality.
Seafood Friendly Meal Plan
Sunday, July 26th // Tuna Casserole // With “back to school” on the horizon (please God, please) I need to get back into our “Sunday supper” routine. Noodle-less but not flavor-less. I love the addition of Gruyere cheese! Regular mayo is totally fine! KID TIP // Boil some egg noodles if your kids are missing the carbs!
Monday, July 27th // Blackened Fish Taco Bowls // Any white fish will do and most options are less than $10 per lb. KID TIP // I’ll bake some frozen fish sticks, cut them up and place in a bowl over rice, black beans and corn. You can also lose the bowl and keep the above kid friendly ingredients separate on a plate. KETO TIP // No corn salsa. Just top with jalapenos and red onion!
Tuesday, July 28th // Crab Cakes // This is a keto friendly recipe but not to worry if you don’t have a the called for keto substitutes on hand. Just sub sugar for Swerve and bread crumbs for almond flour although almond flour is my new jam. I highly suggest it, keto or not. It’s delicious. You can purchase lump crab meat at Costco for half the price!
Wednesday, July 29th // Shrimp Coconut Curry // One of my favorite keto friendly ingredients is coconut milk – I could drink it from the can. Maybe not literally but I do love incorporating it into my recipes. COOKING & KID TIP // I will cook my shrimp first and leave some of the shrimp free of the cayenne seasoning. Two reasons – letting the shrimp cook in the sauce will leave you with overcooked, chewy shrimp. Cook them first, set them aside and then make your sauce. Toss the cooked shrimp in at the very end. This also allows you to serve your kids plain shrimp with some fresh veggies on the side without any additional work.
Thursday, July 30th // Butter Garlic Herb Salmon Foil Packets // Purchase frozen salmon fillets from Costco for $5.99 lb. Keep a bag in the freezer for this and other simple and healthy salmon recipes.
Friday, July 31st // Sheet Pan Shrimp Boil // I suggest snagging a 2 lb. bag of frozen, tail off, raw shrimp while at Costco. Less expensive and if you are doing all of your shopping on Sunday, your shrimp won’t go bad by Friday. KETO TIP // Loose the corn and potatoes – or keep potatoes for kids and toss in a low carb veggie for yourself!!
