I had all of these really creative and exciting thoughts for this week’s meal plan but then I started back to work full-time on Monday and all of my great ideas went out the window. Not to say it’s a bad meal plan – I just didn’t give a lot of thought to the pre-plan chat. I’ve also been keeping my almost one year old niece for the past four days so short, sweet and to the point is about all I could manage. ( Babies are exhausting – how did I forget this?) I’ll be back in the swing of things next week – on time and on point.
Lightened Up Comfort Food
Sunday, August 16th | Seafood Pasta in Foil Packet | Truly one of my favorite seafood recipes and not just because everything cooks in a foil packet – although the simple clean-up does make it pretty irresistible. That and the flavors are out of this world.
Monday, August 17th | Country Chicken Skillet and Vegetables | I feel like this is a chicken pot pie without the pie recipe. Keto Tip | Sub almond flour for breadcrumbs and omit the potatoes. Kid Tip | Use whatever veggies your kids will tolerate – if that’s only carrots and peas, just do that. It will be delicious regardless.
Tuesday, August 18th | Mediterranean Baked Cod | A dump and bake recipe for a super simple weeknight dinner. Kid Tip | Bake their fish in a separate dish – no extra work, just separate their pieces out and place in a baking dish. Season with salt, pepper and butter and bake for the same amount of time! Sprinkle with breadcrumbs for a little added crunch!
Wednesday, August 19th | Low Carb Sloppy Joe Stuffed Peppers | I know sloppy joes get a bad rap because of the overly sweet, canned, stuff we all grew up on but this low carb, low sugar recipe is nothing like the canned stuff. Kid Tip | Serve theirs on bun
Thursday, August 20th | Lemon Chicken Piccata with Capers | I’m not a huge chicken piccata fan but my new found love of almond flour has me willing to try again. If you don’t have almond flour on hand, just use regular flour. Kid Tip | Omit the capers if it’s not their thing. Serve with a simple side salad!
Friday, August 21st | One Pan Parmesan Pork Chops and Asparagus | A super simple one pan wonder to cap off the work week. Keto Tip | Sub almond flour for the breadcrumbs!
