We did it! The first week of school, COVID style, is in the books. It was no easy task getting back in the habit of early AMs, carpool, constant laundry, signed papers, all day mask wearing – it will definitely continue to be an adjustment. But week one is done and we rang in this accomplishment with friends at one of our favorite Charleston spots, Coastal Crust!
Coastal Crust has been a favorite restaurant of mine ever since opening it’s doors on James Island just shy of one year ago. It’s super family friendly AND the food is out of this world. Too often families have to choose between a place where your kid can be a kid and good food – but not at Coastal Crust. Here you get both and then some!
We ordered a few pizzas, a salad and the cast iron cookie to close out the night. The kids stuffed their faces and then made their way over to the soccer fields where they played tag and soccer with the other kids. This gave the older gals time to talk, sip on a good glass of wine and relax. The perfect way to say peace out to a long week!!

Sunday, August 30th |Cheesy Zucchini Chicken and Rice Bake – The perfect healthy-ish style comfort food casserole. Zucchini and chicken baked with rice, orzo topped with cheese, everything bagel spice and basil. I mean, come on!
Monday, August 31st |Keto Salmon with Cilantro – Just a basic baked salmon recipe with cilantro and lemon. I will drizzle my fish with a little olive oil before baking to keep it from drying out. Serve with roasted asparagus for a light meal to start your week. KID TIP | Omit the red pepper flakes. If your kids won’t eat salmon, snag some fish sticks (my girls love the Trader Joes brand) and bake them while the salmon is baking.
Tuesday, September 1st | Thai Inspired Ground Turkey Stir Fry – I love a Thai inspired stir-fry especially when it’s this easy. Quick note – “T” in this recipe stands for “Tablespoon”. KID TIP | Kids usually like the sweetness of this dish but not the bell peppers so toss the meat mixture with the sauce and serve over rice for kids. Then add back in the cooked peppers for you! KETO TIP | Sub coconut aminos and no sweetener
Wednesday, September 2nd | French Onion Chicken – I’ve said it before and I’ll say it again – the ladies behind The Modern Proper are geniuses and this recipe proves it. Serve with a warm French loaf and side salad!
Thursday, September 3rd | Sheet Pan Italian Sausage Heros with Honey Mustard – I’m going to be honest – I’ve never heard of a Hero before in my life. I’m team Hoagie all the way. No matter what you call it, this recipe is PERFECT for a busy weeknight. KETO TIP | loose the hoagie and sub coconut aminos for the sauce!
Friday, September 4th | Chicken with Tomato Herb Pan Sauce – I believe all food tastes better when topped with roasted tomatoes and this recipe is no exception. I am going to change the cooking process up a bit – sear your chicken breasts a few minutes per side, turn your stove down to low and cover your pan leaving the lid slightly open. Let the chicken breast cook for 11 – 14 minutes, depending on the thickness. Once cooked, remove from pan and cook tomatoes as suggested. Top tomato mix over cooked chicken and that’s it – baking in the oven will dry out your chicken. KID TIP | Serve chicken, plain, with a dippy sauce and side of veggies!
