Last Saturday I found myself aimlessly staring into my fridge, wondering what to cook for lunch with only ground beef on hand. Well ground beef, cheese and condiments. I immediately craved a hamburger but because I’m still trying to stick to a keto friendly diet I decided to forgo making patties and instead use what I had available to make a hamburger casserole. The results were amazing – a cheesy hamburger mix, full of all of the flavors I love, with all of my favorite toppings!
What You Need:
- 2 lb. ground beef
- 1 medium onion, chopped (you can omit if your kids don’t like onion)
- 1/4 cup ketchup (unsweetened for keto)
- 1/4 cup mayonnaise
- 1 tbsp dijon mustard
- salt & pepper
- 2 cups shredded cheddar cheese (sharp white cheddar would be delicious)
- pickles, red onion, avocado, shredded lettuce, bacon, tomatoes
What You Do:
In a large skillet, over medium heat, brown ground beef and onion. Once cooked, drain off any liquid. Remove from heat and mix in ketchup, mayonnaise, Dijon mustard, salt & pepper. Pour mixture into a 2 quart glass dish and top with shredded cheese. Bake for 20 minutes until hot and bubbly!! Serve immediately topped with your favorite classic hamburger toppings!
