My kids are ten times more likely to eat whatever it is I’m cooking if it doesn’t have anything green in it or near it and if they can wrap it in some kind of carb. Enter my simple Greek Gyro Chicken. The perfect weeknight recipe, this chicken can be served in a pita, taco shell or atop lettuce satisfying everyone in your family!
What You Need:
- 2 lbs. boneless, skinless chicken ( I use 1 lb breast and 1 lb. thighs)
- 3 cloves garlic, minced
- 1 onion, diced
- 1/4 cup lemon juice – about two lemons
- 2 tbsp. Greek seasoning – I use Cavanders
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1/3 cup water
- cooking spray
- Toppings – lettuce, tomatoes, cucumbers, red onion, roasted red peppers
- Tzatziki – I use store bought but you can make your own!
What You Do:
Spray inside of your slow cooker with cooking spray. Add uncooked chicken to the bottom of the pot. In a separate bowl, combine garlic, onion, lemon juice, Greek seasoning, red wine vinegar, olive oil and water. Stir to combine. Pour mixture over the chicken, making sure the liquid gets underneath the chicken. Cover with lid and cook on low 6 – 8 hours. Serve wrapped in a pita or over lettuce topped with tzatziki and your favorite toppings!
