Last week, over on Instagram, I asked all of you to give me some feedback on what type of recipes you would like to see more of on the meal plan moving forward. There were some awesome responses – casseroles you can freeze, more sheet pan recipes, soups, more seafood – so many great ideas for me to incorporate into my meal plans for the upcoming weeks. But far and away, the number one request was for more instant pot recipes.
I get it – the instant pot is an incredibly useful kitchen tool that produces slow cooker results in an instant. It’s a slow cooker, yogurt maker, rice cooker, saute pot and more all in one convenient appliance. This trendy gadget is a straight up game changer when it comes to weeknight meals as it cooks whatever you are making up to 70% faster than traditional methods. Most instant pot recipes are dump and go so you can be completely hands off and focus your attention on something far more exciting – like a book, bath and a glass of wine?

I’m going to try and post a video tutorial later today on Instagram so make sure you pop over there if you are still too nervous to turn your instant pot on! ( I promise it’s not as scary as it seems!) This week I tried to share recipes that were a little more unique and diverse than the same old same old you have probably seen and made a thousand times. Instant Pot Meal Plan
Sunday, October 25th | Instant Pot Stuffed Shells | 8 minutes of cook time later and this creamy dish is ready to serve. Don’t worry about piping the ricotta mix into the shells – a small spoon will work just fine!
Monday, October 26th | Instant Pot Salsa Verde Chicken | 2 ingredients. Total. 2. Perfect for a busy Monday, the chicken breast only cook for 18 minutes. Serve in tortillas or over lettuce. Kid Tip – serve over nachos! Meal Prep – double this recipe to use for a quick and healthy lunch.
Tuesday, October 27th | Instant Pot Sour Cream Pork Chops | Say goodbye to dry, tasteless pork chops and hello to tender, juicy chops you will want to eat over and over and over again. Serve over potatoes, rice, pasta or cauliflower rice – or just eat as is! Keto Tip – sub coconut aminos for Worcestershire and xanthan gum for cornstarch.
Wednesday, October 28th | Instant Pot Tuscan Soup | Italian sausage, sundried tomatoes, parmesan, heavy cream and kale come together in 9 minutes to make this creamy dreamy recipe. Serve as is, over cooked cheese tortellini or cauliflower rice! Kid Tip – use mild sausage, not hot.
Thursday, October 29th | Instant Pot Stuffed Peppers | I love a good stuffed pepper but in order for the peppers to become tender enough to enjoy, you have to cook them for around an hour. Not the case if you use your instant pot – 9 minutes of cook time and you have perfectly tender and flavorful peppers. Keto Tip – omit the rice.
Friday, October 30th | Turkey White Bean Pumpkin Chili | It might sound weird but there’s nothing odd about the way this recipe tastes. The pumpkin gives this lightened up chili depth of flavor and a richness you do not want to pass up. Such a great way to close out the week! Keto Tip – sub mushrooms for the beans!
