I was so excited to finally share my recent collaboration with Tuttorosso Tomatoes and The Feedfeed. Creating a Chicken Creole recipe to live on The Feedfeed’s site was one of the highlights of my blogging career – OK, maybe THE highlight of my blogging career.
It’s validating to have a national brand put their trust in me and be recognized for all of the hard work and effort I’ve put into growing Dinner With The Duffys over the past two years. Because when it comes right down to it, having a full time job and a part time passion is not easy. There are many, many, many days I have wanted to shutter the doors and go back to a time when my weekends were strictly for relaxing. But then opportunities like this one come knocking and I feel it in my soul this is what I’m supposed to be doing – creating and sharing meal plans, recipes and cooking tips and tricks with all of you.
If I Fail, I Fail
When I started Dinner With The Duffys I figured I would share a few meal plans with friends and maybe grow enough to make a little extra money on the side. Truth is, I had no clue what I was doing and two years later still have a lot to learn. But I’m here to stay learn and grow. My dream board is covered with inspiration to create a cookbook, start a cooking show and so much more. Yes, these are big dreams but why have dreams if they aren’t BIG?! And you never know, two years ago DWTD didn’t exist and last week I created a recipe for a national brand.
I wouldn’t be in this place without all of YOU so thank you – THANK YOU – for being here and affording me this incredible opportunity to do what I feel in my bones I’m here to do. Sunday, November 8th | Dutch Oven Pot Roast | The ultimate Sunday Supper comfort dish. I love the addition of red wine – gives this recipes so much depth and flavor!
Monday, November 9th | Sesame Shrimp with Ginger Broccoli | I’ve been pouring over some old cooking magazines and stumbled across this recipe. Yes, you need to dredge the shrimp but it’s no big thing – it will take you five minutes and the cook time is minimal! KETO TIP – use a brown sugar alternative and sub almond flour for panko!
Tuesday, November 10th | Turkey Cheeseburger Sloppy Joe | This is not the same as the Manwich sloppy joe recipe we all grew up eating. It’s more of a grown up sloppy joe but the kids won’t know the difference. Carrot, red bell pepper and lean ground turkey make for a lightened up childhood favorite. KETO TIP – use an unsweetened ketchup ( I love this one) and lose the bun. Serve over cauli rice!
Wednesday, November 11th | Grilled Chicken and Asparagus Pesto Pasta | I love the combination of asparagus, chicken and pesto. This recipe calls for you to grill both the asparagus and the chicken but I suggest cooking the asparagus in the oven and the chicken in a pan (use my fool proof chicken guide) if grilling isn’t your thing. P.S. – grilling is not my thing. KIDS PLATE – deconstruct it, don’t mix it! Plain pasta, topped with butter, cooked chicken and plain asparagus. Serve with pesto as a dippy sauce! KETO TIP – serve over zucchini noodles.
Thursday, November 12th | Grilled Vegetable and Flank Steak Salad with Blue Cheese Vinaigrette | I’m pretty sure you could put this blue cheese vinaigrette on just about anything and I’d happily eat it. KIDS PLATE – Steak, side of the vegetable mix and a dinner roll.
Friday, November 13th | Creamy Oven Baked Chicken | Chicken breasts topped with a cream cheese, spinach and sun dried tomato mix then baked in the oven. So easy and good! Kids can scrape off the cream cheese mix if they are picky!
