T-minus 13 days until the biggest, most fabulous food day of the year! Seriously, all I can think about lately is my Thanksgiving menu. Turkey, stuffing and pumpkin pie recipes are consuming my dreams. Just the thought of waking up on Thanksgiving morning and taking my place in the kitchen, apron clad, listening to the Macy’s Day Parade in the background makes me giddy.
I plan to share my Thanksgiving menu with all of you early this coming week so be on the lookout. The best of the best turkey, stuffing, crock pot mashed potato (yep, crock pot) and squash casserole recipes on the market. Trust me, I’ve become obsessed with perfecting the Thanksgiving meal!
The following week’s meal plan will be a short one with the holiday but I will share a “turkey leftover” edition to give y’all lots of options for what to do with all of your leftover bird!!!
Meal Plan 11/15 – 11/20
Sunday, November 15th | Tortellini Soup with Italian Sausage and Kale I’ve only made this @modernproper recipe once but as soon as the spoon hit my lips I knew I’d be making it again and again and again. It’s that good. Store bought tortellini, a can of crushed tomatoes, some sausage and spices all topped off with a little cream – are you drooling yet? KID TIP | No, my girls will not eat kale and I’m down with that. Kale only needs a minute or two to cook down so add the tortellini and cream, cook for 3 minutes and serve your kids bowls. Then go back and add kale to the pan, cook for 2 minutes more and you are done!
Monday, November 16th | Crockpot Carnitas with Pork Tenderloin | Crock pot recipes are a great way to kick off the week. Extra love when what your cooking in your crocker can be adapted in multiple ways. Serve this as is, in a tortilla, over lettuce, on a bun – the options are endless. MEAL PREP | Make a carnitas salad bowl with the leftovers for lunches this week! Avocado, black beans, canned corn and a fresh squeeze of lime – so good!
Tuesday, November 17th | Korean Style Pork Chops | I prefer to eat my pork chops with a sauce and this one does not disappoint. Sweet, tangy and juicy, even your picky eaters will love this recipe. KID TIP | If you are worried about the spice, omit the chili garlic sauce altogether and sprinkle the adult’s chops with red pepper flakes once served.
Wednesday, November 18th | Instant Pot Butternut Squash Soup | I am so glad the temps are finally going to be cool enough to eat soup again in Charleston. MEAL PREP |Chop the veggies ahead of time and purchase pre-cubed squash. KID TIP | If your kids or husbands aren’t soup people just plan to serve their soup with a some rotisserie chicken and crusty bread.
Thursday, November 19th | Chicken Bacon Ranch Casserole | Chicken, bacon and broccoli in an creamy, cheesy baked dish – basically code for family friendly dinner. KID TIP | If your kids don’t like broccoli just omit it and cook separately. Serve on the side of the chicken dish! KETO TIP | Sub cauliflower rice
Friday, November 20th | Classic Cheeseburger with Special Sauce | I’m in the mood for a burger right now which is how this ended up on the meal plan. Nothing wrong with firing up the grill on a Friday afternoon and making these juicy burgers. KETO TIP | Make a burger salad!
