Well, that was a delicious last few days. I’ve eaten so much I feel like I could not eat for three days straight and still gain weight. I don’t want to see another corn casserole, sausage stuffing or mac n’ cheese dish until, let’s say, Christmas.
If you are anything like me, the week after Thanksgiving is daunting. I desperately want to cook super healthy, lay off the vino and exercise like a champ but I’m always so stressed about being back to work and school that I get super overwhelmed and end up head first in a bag of peppermint bark. This year I’m taking a different approach to my after Thanksgiving meal plan. Instead of a low calorie only focus I’m going in with a quick and easy plan hoping it will allow us to get back into a routine. And routine is key. Next week we can worry about calories – this week we just need to survive.

Sunday, November 29th | Charleston Okra Soup | I love okra soup – it’s one of my all time favorite winter dishes. My version is a simple dump and simmer recipe, loaded with veggies, perfect for a family Sunday supper.
Monday, November 30th | Baked Ranch Chicken | Don’t make the ranch seasoning mix – make it easy on yourself and purchase the pre made packet. Serve with a side salad or roasted asparagus!
Tuesday, December 1st | Sheet Pan Lemon Dill Salmon with Roasted Tomatoes | Three of my favorite things live in this recipe – roasted tomatoes, dill and lemon. Healthy and simple, this dish requires very little hands on time. Serve over couscous, cauliflower rice, or with a side salad. Kid Tip | If your kids will not eat salmon, toss some fish sticks onto a sheet pan and cook alongside the salmon.
Wednesday, December 2nd | Mexican Quinoa Salad with Rotisserie Chicken | The perfect meal prep recipe – make this on Sunday while your okra soup is simmering and Wednesday will be a dream. Toss in a rotisserie chicken for more bulk. Kid Tip | Deconstruct it. Serve a little rotisserie chicken with sides of plain quinoa, black beans, corn etc.
Thursday, December 3rd | Cheesy Beef Tortellini Skillet |15 minutes and 5 simple ingredients make this an awesome weeknight dish, perfect for picky eaters.
Friday, December 4th | The Best Healthy Turkey Chili | The perfect way to cap off what will most certainly be a busy week. Put on your pjs, pour yourself a glass of wine and curl up on the couch with this delicious turkey chili!
