Not sure about y’all but I thought last week’s meal plan was incredible. I loved every single recipe on the menu. It made me realize I need a place on the website where I can save recipe “favorites” so everyone can easily find the best tried and true dishes. I will work on this in the next few weeks! In the meantime, if you haven’t made the salmon salad, hamburger steaks, meatball salad or creamy pasta recipes you need to add them to your future meal plans ASAP.
All of the recipes from last week were so adaptable, healthy & delicious making feeding your family a breeze. I’m hoping this week will leave you feeling the same way!
Meal Plan Week Jan. 31st – Feb. 5th
Sunday, January 31st | Arugula Pesto Pizza with Herbed Ricotta | Total Time: 42 minutes | Build a pizza Sunday is one of my favorites because it forces everyone to be together in the kitchen and you can easily accommodate everyone’s likes/dislikes. I will purchase pre-made pizza dough and make a separate kid friendly version as there is no way Regan will eat a pizza topped with lettuce. Meal Prep Tip: Cook an extra pizza for kids lunches or a quick kid dinner for the week.
Monday, February 1st | Baked Cod | Total Time: 40 minutes| Cod is great for picky eaters because it’s not too “fishy.” This recipe looks awesome but I have a few tips to make it easier and less hands on. First, sub sundried pesto for the red pepper paste. You can find it in most grocery stores. Second, use panko bread crumbs instead of making your own. Serve as is with roasted veggies or you can put the fish in tortillas.
Tuesday, February 2nd |Slow Cooker Poblano Chili | Total Time: 3 – 7 hours | There are only three things I like about winter – fires, a warm bowl of chili and the snow we get in Charleston once every twenty years. Cold is not my jam. Poblano peppers aren’t spicy so don’t worry about feeding this to the kids. Serve as is with all of the toppings or change it up and top over nachos!
Wednesday, February 3rd | Greek Chicken Chopped Salad | Total Time: 45 minutes | I’m down with putting a salad on the meal plan every week as long as it has tons of flavor and can be easily adapted for the kids. Which this one is – and can!
Thursday, February 4th | Healthy Ground Beef Vegetable Skillet | Total Time: 30 minutes | Quick and simple, this low carb beef and veggies skillet can be easily turned into tacos for the kids while you enjoy the healthier version.
Friday, February 5th | Honey Mustard Chicken with Bacon | Total Time: 45 minutes | I love honey mustard and I love bacon. Not sure why I haven’t thought to combine these two flavors before stumbling upon this super easy recipe. Kids will love this one. Serve with green beans or sautéed veggies.
