This simple baked salmon dish is perfect for a busy weeknight but elegant enough to serve to company.
Last week I made the most delicious salmon cobb salad using this easy baked salmon recipe. A few basic ingredients and twelve minutes in the oven means there is no excuse not to make this healthy & family friendly dish!
Ingredients
- 1.5 lbs. salmon ( or 8 ounces per person)
- 3 tbsp. olive oil
- 1/2 lemon, juiced
- 1 tbsp. fresh dill, finely chopped
- 1 tbsp. fresh parsley, finely chopped
- 3 cloves garlic, minced
- salt & pepper
- cooking spray
Instructions
- Pre-heat oven to 425. Lightly spray your baking sheet with cooking spray. Place salmon skin side down on baking sheet.
- Pat salmon dry. Salt and pepper the salmon to taste.
- Mix together the olive oil, lemon juice, fresh dill, fresh parsley and minced garlic. Pour over salmon.
- Bake for 12 minutes (for every half inch of thickness, bake your salmon 4 – 6 minutes) Your salmon is done when easily flaked.
