Taco seasoned ground beef simmered with veggies and tomatoes makes for a quick and healthy weeknight dinner!
I shared a Healthy Ground Beef Vegetable Skillet by the Flavours of Kitchen on the meal plan this week. I loved how simple, versatile and healthy it appeared and was excited to try it out. But as I was cooking the recipe, I felt as if some steps might be out of order especially if you are trying to deconstruct this recipe for your picky eaters. I ended up making some slight adjustments I think will help take this dish from good to great!
Ground Beef & Veggie Taco Skillet (Adapted from Flavours of Kitchen)
Ingredients
- 1 lb. ground beef
- 1 medium onion, chopped
- 1 tbsp. minced garlic
- 1 packet of taco seasoning
- 1 (14.5) oz. can diced tomatoes with liquid
- 1 yellow (red or orange is fine) bell pepper chopped
- 1 zucchini (or squash) chopped
- Toppings – jalapenos, sour cream, shredded cheese
- 2 tbsp. olive oil
Instructions
- Ground beef until cooked thru. Drain and set aside.
- Add olive oil to skillet over medium heat. Sauté onion, bell pepper and zuccini until lightly browned and soft. Add in garlic and cook one more minute or until fragrant. Pour in diced tomatoes with liquid.
- Add browned beef and taco seasoning to tomato mixture. Simmer for five minutes. Serve immediately topped with your favorite toppings.
Kid Tip: Portion out plain ground beef after cooking but before you add it back in with the tomatoes for your kids and serve in tacos.
