I am going to keep it short and sweet this week because I turn forty on Sunday and all of my energy is focused on celebrating! In case you weren’t aware I live for my birthday. Every year I try and force a month long celebration onto my family but I can’t seem to get any of them to buy in. Hmmm. I am working on a “how I feel about my entry into middle age” post so stay tuned for that! Other than that I hope y’all have a fabulous week of cooking and eating!

Sunday, April 18th | Chicken and Wild Rice Casserole | Total Time: 1 hr 5 minutes | One of the most satisfying dishes I’ve ever made, this chicken and wild rice casserole is perfect for Sunday supper but also great to serve at a dinner party. Toss in some dinner rolls and a simple side salad! Meal Prep: Cook additional rolls to serve on your picky eaters plate during the week.
Monday, April 19th | Cod in a Tomato Lemon Butter Sauce | Total Time: 30 minutes | Cod is a mild white fish which makes it great for everyone in your family. Bursting cherry tomatoes make the most delicious (and healthy) sauce. Serve over asparagus for a complete meal. Kid Tip: Set aside the plain cod cooked in butter for the kids. Serve with a dippy sauce, plain tomatoes, cooked asparagus and dinner rolls.
Tuesday, April 20th | Chicken Taco Casserole | Total Time:30 minutes | Believe it or not this is a Weight Watchers dish. Use a rotisserie chicken (pick on Sunday) to make this recipe come together in minutes. Kid Tip: If there is no way your kids will eat the taco mix just deconstruct: plain black beans, plain rotisserie chicken, tortilla chips with some melted cheese and toss in a raw veggie.
Wednesday, April 21st | Turkey Meatballs over Zoodles | Total Time:30 minutes | If you follow my stories on Instagram you already know how I feel about zoodles; basically I tolerate them because I know carbs are no longer good to me. Feel free to sub regular pasta AND absolutely use frozen turkey meatballs to speed this one up.
Thursday, April 22nd | Buffalo Chicken Salad | Total Time: 20 minutes | Sometimes you just need a good salad. Make your kids chicken tenders and call it.
Friday, April 23rd | Pizza Chicken | Total Time: 30 minutes | A great option for when you are in the mood for pizza but don’t want the carbs. Your kids will love the mini pepperoni!
