Sunday, May 9th | Mother’s Day | I could share a gazillion different recipes for dads/kids/partners to cook tonight but honestly, it doesn’t matter what it is. Just cook your wife dinner for Mother’s Day. Don’t ask her what she wants or for suggestions – just plan, cook, serve and clean. Trust me.
Monday, May 10th | Golden Chicken | Total Time: 20 minutes but marinate for at least 2 hours | Change up your boring chicken with this easy recipe. Honey, garlic, mustard and a little turmeric come together in minutes but will have a lasting effect. Serve with my favorite side dish – okra! Meal Prep: make the marinade on Sunday.
Roasted Okra
Ingredients
- 1 lb fresh or frozen okra if using frozen, place in the oven for about 3 minutes then toss with olive oil, salt, pepper & garlic powder
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp pepper
Instructions
- Pre-heat oven to 425. Cut okra in half, lengthwise. Toss with olive oil, salt and garlic powder
- Spread the okra on a large baking pan, making sure not to overlap the okra – they won't roast if too crowded – just steam and end up soggy.
- Bake for ten minutes, shake pan, and then place back in for another 5 – 10 minutes. Be careful not to burn.
Tuesday, May 11th | Baked Boneless Pork Chop and Asparagus Sheet Pan | Total Time: 25 minutes | Nothing better than a sheet pan meal. The pork chops are brushed with a yummy stone ground mustard, Worcestershire and mayo mix then baked to perfection.
Wednesday, May 12th | Creamy Farro with Pesto Asparagus and Peas | Total Time: 35 minutes | If you’ve never cooked with farro before you are definitely missing out! Farro has a nutty taste and is packed with tons of protein and fiber. In this recipe you cook the farro then toss it with store bought pesto, lemon, asparagus and peas. I will add in shrimp or baked chicken for a complete meal. Kid Tip: You can deconstruct this one! Plain chicken, side of plain farro and peas!!
Thursday, May 13th | One Pot 30 Minute Zoodles and Meatballs | Total Time: 25 minutes | Almost everything in this recipe can be purchased pre-made. Frozen or fresh meatballs tossed in jarred marinara (Mezzetta is my favorite), served over spiralized zucchini (which you can also purchase). Kid Tip: Serve over regular pasta.
Friday, May 14th | Sausage and Potato Foil Packets | Total Time: 25 minutes | I love planning a grill meal for Fridays as it forces me to get outside and enjoy the gorgeous weather but you can absolutely bake these in the oven if you prefer.
