Better late than never? I am so sorry I’m just getting this week’s meal plan to all of you!! Hopefully you dug back thru some of my vintage meal plans for something yummy for your family. I had an awesome weekend full of lots of activities that left no time for meal planning/prep. My fridge is empty but my heart is full.
Meal Plan 5/23 – 5/27
Sunday, May 23rd | Lemon Honey Dijon Chicken | Total Time: 5 hours | Don’t let the hours of total time freak you out – 4 of those hours are for marinating and 45 of the total is cook time. Simple enough to make for your family but tasty & beautiful enough to serve to a crowd.
Monday, May 24th | Burger Bowl with Special Sauce | Total Time: 30 minutes | I could eat this salad all day everyday and my kids actually love it too! Sub Greek yogurt for the mayo if you are trying to cut calories!
Tuesday, May 25th | Creamy Asiago Chicken | Total Time: 35 minutes | Asiago is a creamy, nutty cheese that gives this simple chicken dish so much flavor. Time Saving Tip: Use chicken tenderloins and skip the first two steps! Serve over quinoa, rice, or cauli rice. Kid Tip: Set aside plain chicken and serve with dippy sauce.
Wednesday, May 26th | Garlic Rosemary Pork Chops | Total Time: 30 minutes | Pork chops don’t have to be tough, dry and flavorless and this recipe proves it. Delish does a fabulous job of providing simple steps (and video) to show you how best to cook these chops.
Thursday, May 26th | Instant Pot Salsa Chicken with Cilantro Lime Crema | Total Time: 20 minutes | Quick and easy sums this one up. Oh and versatile. Serve in a bowl over lettuce or in taco shells for the kids!
Friday, May 27th | Pesto Pasta with Chicken Sausage & Roasted Brussels Sprouts | Total Time: 50 minutes | Roasted brussels sprouts tossed with chicken sausage, pasta and pesto then topped with parmesan cheese. Kid Tip: Pesto pasta (or plain) with plain chicken sausage and a side of brussels sprouts!
