Sunday, June 13th | Classic Panzanella Salad with a Perfectly Grilled Steak | Total Time: 1 hour | Panzanella is Tuscan chopped salad using soaked stale bread and summer tomatoes and it pairs perfectly with a simple grilled steak. I love this for an easy Sunday supper!
Monday, June 14th | Quinoa and Shrimp Paella | Total Time: 35 minutes | Subbing quinoa for rice helps to lighten up this dish. I love it for a weeknight because everything cooks in one pan. KID TIP – deconstruct this recipe by sautéing shrimp separately and cooking a handful of peas to serve alongside.
Tuesday, June 15th | Buffalo Chicken Avocado Salad | Total Time: 45 minutes | A weeknight salad full of flavor the whole family can enjoy. KID TIP: if buffalo sauce is too spicy just keep the kids plain. Serve alongside fresh veggies with ranch!
Wednesday, June 16th | Buttery Garlic Herb Chicken with Zucchini | Total Time: 25 minutes | Summer is the perfect time to enjoy zucchini as it’s peak season from June – August. Sub chicken thighs for even more flavor.
Thursday, June 17th | Apricot Glazed Pork Tenderloin with Garlic Parmesan Roasted Brussels Sprouts | Total Time: 45 minutes | Nothing dry and boring about this simple pork recipe. Mix together apricot preserves with a little Dijon mustard for the perfect sweet & tangy glaze. Serve alongside crispy parmesan sprouts!
Friday, June 18th | Garlic Butter Creamed Corn Chicken | Total Time: 40 minutes | Not exactly health food but damn it looks delicious. Fresh corn mixed with bacon, perfectly cooked chicken and a little heavy cream! I’m drooling. Meal Prep: cook bacon a head of time and double for kid’s salads!
