Two of my favorites from last week’s meal plan – Greek Zucchini Moussaka and Baked Ranch Chicken and Veggies. Both were a huge hit in my house and both produced leftovers!!

Sunday, August 1st | Cheesy Chicken Orzo | Total Time: 30 minutes | Total Cost: $24.67 | Gooey and cheesy orzo mixed with perfectly cooked chicken for your Sunday night win. Super family friendly.
Monday, August 2nd | Sheet Pan Chicken Pitas with Tzatziki | Total Time: 45 minutes | Total Cost: $47.79 | Yes, this is an expensive recipe but if you already own the three spices – cumin, curry and smoked paprika (you can sub regular paprika) it’s more like $29. I will purchase pre-made tzatiki. My favorite is Esti!! I love starting the week with an easy sheet pan recipe!
Tuesday, August 3rd | Tex Mex Chicken Chopped Salad | Total Time: 20 minutes | Total Cost: $25 | Taco Tuesday can be light and family friendly. Mixing pre-made ranch dressing with a taco seasoning packet is the perfect way to up the flavor without adding any additional work. Kid Tip: turn theirs into a grilled chicken taco!
Wednesday, August 4th | Ground Turkey Baked Ziti | Total Time: 1 hour | Total Cost: $37.44 | As with the chicken pita recipe, the cost to you will come down substantially if you own garlic powder, onion powder and dried oregano. I will use whole wheat ziti (trying to cut down on the white stuff). To save time, sub your favorite jarred pasta sauce!
Thursday, August 5th | Hibachi Steak Bites with Zucchini and Mushrooms | Total Time: 25 minutes | Total Cost: $19 | Hibachi without the price tag!!! A few notes as this recipe was created to be all kinds of soy, keto and other acronym diets I don’t understand. Coconut aminos is just soy sauce. Ghee is fat so sub oil or butter. I will sub regular olive oil for avocado oil.
Friday, August 6th | Pork Chops with Dijon Herb Sauce | Total Time: 30 minutes | Total Cost: $26 | Truly my favorite pork chop recipe. It’s easy, fast and the directions keep you from drying out the chops! Serve with a veggie and call it!
