Last week was a doozy and my kids were only in school for three HALF days! How in the hell do we do this every year? School, carpool, homework, after school activities, maybe exercise, dinner and finally bedtime. It’s insanity. Thankfully I loaded the meal plan with super quick and adaptable recipes. My favorites from last week were the Instant Pot Ribs and the One Pan Balsamic Chicken and Veggie Bake. Both were huge hits with my family and both produced leftovers!
OK so this week is amazing – every single recipe is drool worthy. I ran out of time to provide the cost breakdown for each but I did make an effort to only include budget friendly recipes. I’m not sure about yours but my grocery bills have sky rocketed over the past few weeks. I mean, our budget has doubled. Food prices, like everything else, are insanely high right now so I’m really trying to stay away from the more expensive items (seafood, steak etc.) to help keep things in check!
Meal Plan 8/22 – 8/27
Sunday, August 22nd | Roasted Tomato Basil Chicken Sandwiches | Total Time: 1 hour | I love a sammie for dinner – for some reason it feels like you are breaking the rules which is odd because sandwiches are a perfectly acceptable supper option. This recipe requires a little extra time but every step is SO worth it. You can totally deconstruct this one to work for ever member of your family!
Monday, August 23rd | Greek Chicken with Lemon and Feta | Total Time: 45 minutes | This recipe was made for busy weeknights. The marinade is just lemon, olive oil and spices so it should pass the picky eater inspection. Serve with a side salad for a super healthy dinner.
Tuesday, August 24th | Skinny Meatloaf | Total Time: 1 hour | I asked my family if they had any dinner requests for the upcoming week and Ava immediately yelled for this meatloaf. I can’t say I blame her – it’s one of my favorites too. Lightened up by subbing ground turkey for beef!
Wednesday, August 25th | Crispy Black Bean Tacos with Cilantro Lime Sauce | Total Time: 25 minutes | I love replacing beef with black beans in this recipe. The Cilantro sauce is divine – you will want to drink it. A few things – double the cilantro lime sauce to use as a dressing on taco salads for lunch this week. You can sub greek yogurt for sour cream if you are looking to lighten it up.
Thursday, August 26th | Instant Pot Balsamic Pork Tenderloin with Crispy Parmesan Green Beans | Total Time: 50 minutes | I forget how much I love my Instant Pot until I use my Instant Pot and then I want to use it all of the time. Also – anything cooked in balsamic is my favorite. Kid friendly, will make tons and mostly hands off cook time!
Friday, August 27th | Simple Sausage and Peppers Skillet | Total Time: 25 minutes | Let’s end this week on a super simple note. Slice the sausage, slice the peppers & onions and cook them up. Really quick and easy. Deconstruct this for the kids – serve plain sausage, favorite dippy sauce with a side of egg noodles.
