I’ve spent the past four days with my oldest and dearest friends capping off a year of us turning 40! We had a blast eating, drinking and relaxing together and I am so sad to see it come to an end. I walk away with a belly full of laughs and a full heart reminded of how lucky I am to have such strong women in my life who have known and loved me for more than twenty five years.
I will get a Destin re-cap post up this week but for now I need to get out of vacay mode and back to reality. First up – meal plan and ordering groceries for the week!
Meal Plan 9/12 – 9/17
Sunday, September 12th | Panzanella and Sausage Salad | Total Time: 30 minutes | The weather is perfect for eating outside and this quick dish will not disappoint! Toss a few loaves of Italian bread onto the grill along with some sausages and pour yourself a glass of something cold!
Monday, September 13th | Shrimp Boil Sheet Pan | Total Time: 25 minutes | Truly one of my favorite weeknight meals. Toss potatoes, shrimp, corn and sausage onto a sheet pan and bake. Kid Tip: I pull some of the potato, corn, shrimp & sausage mix out and only toss with melted butter, salt and pepper because the Old Bay can be a little too spicy for my girls!
Tuesday, September 14th | Fiesta Chicken | Total Time: 50 minutes | Nothing new about this Mexican dish but I do love the addition of broth and tomatoes! Double for healthy weekday lunches!
Wednesday, September 15th | Easy Chicken Alfredo with Zoodles (or noodles) | Total Time: 25 minutes | Yum yum yum – zucchini noodles tossed with cream cheese and chicken and a little salt & pepper. Kid Tip: serve plain chicken, dippy sauce and a side of veggies!
Thursday, September 16th | Ground Turkey Pasta | Total Time 30 minutes | Lightened up & grown up beef & shells! A recipe everyone in your family will love!
Friday, September 17th | Hibachi Shrimp (or Chicken) Rice Bowl | Total Time: 30 minutes | Am I the only one who requests only white sauce at a Hibachi restaurant? I could drink it with a straw. My girls love it too which is why this recipe is on repeat at our house! Perfect to kick-start your weekend!
