I love the “faller” season ( fall + summer) in Charleston when it’s cool in the AM & PM but warm in the middle of the day. It’s hell on picking an outfit but it gives you the best of both worlds. The cooler air has me totally committed to all things fall – decorating for Halloween, baking, and craving soups. Ava and I made the yummiest pumpkin muffins this past week which I will share tomorrow so stay tuned!
Meal Plan 9/26 – 10/1
Sunday, September 26th | Pumpkin and Pesto Cheese Stuffed Shells | Total Time: 1 hour | Does the combo of pumpkin and pesto sound odd to you? If yes, let it go because it’s absolutely delicious. Kid Tip: After you stuff your shells with the cheese & pesto mix pull out enough shells for your pickier eaters. Pour a few tablespoons of jarred marinara in a small baking dish, place cheese stuffed shells on top of the sauce, and top with more marinara. Bake alongside the pumpkin dish!
Monday, September 27th | Flaky Oven Baked Cod Fish | Total Time: 35 minutes | Of all the varieties of fish, cod is the most tolerated by my kids because it has a really mild flavor. I love this recipe because you bake the fish, plain, then top it with an amazing spicy lime sauce. Perfect for families. Kid Tip: When baking the fish, top kids pieces with salt, pepper, AND parmesan cheese then omit the sauce. Serve with a bacon side salad, asparagus, or roasted potatoes.
Tuesday, September 28th | Air Fryer (or oven baked) Sweet Chili Chicken and Brussels Sprouts | Total Time: 30 minutes | I don’t love brussels sprouts but I want to love them so every now and again I share a brussels recipe hoping this will be the one that makes me love them. We shall see. I do not own an air fryer so I will make this recipe on the stove. Kid Tip: pull out some of the chicken and keep plain. Bake in the oven with a little salt, pepper, and garlic powder. Serve with brussels sprouts and a dippy sauce.
Wednesday, September 29th | Healthy Zucchini Tomato Italian Sausage Soup | Total Time: 25 minutes | There isn’t a kid shortcut for this yummy soup but that’s A-OK – serve the kids some frozen chicken tenders and eat the leftovers for lunch!
Thursday, September 30th | Greek Turkey Rice Bowls | Total Time: 45 minutes | Anytime I come across a “build your own” recipe I immediately pin it because this type of customizable recipe makes satisfying my family at dinner time a breeze. Enter this Greek Turkey bowl. A few tips: purchase store-made tzatziki if you are short on time. My favorite is Esti! Don’t worry about rinsing your rice and omit adding the sundried tomatoes if your kids will boycott. Kid Tip: serve a side of rice, ground turkey, pita bread, and cucumbers.
Friday, October 1st | Everything Cheddar Tomato Bacon Grilled Cheese | Total Time: 20 minutes | Is there anything better than a warm, cheesy grilled cheese on a cool night? I’ll save you the time; there isn’t. The addition of Havarti cheese, sourdough, and everything bagel spice elevates this simple sammie but you can keep it traditional and opt for whatever bread you have lying around the house, cheese, and butter.
