I’ve never been so happy to see Saturday, October 16th. For those that don’t know I’m the Director of Alumni Relations for a local high school and I just wrapped two weeks of homecoming events. I’ve hosted event after event after event and I just want to crawl into a dark cave and sleep for 24 hours straight. Of course, I woke before the sun was up and wasn’t able to go back to sleep.
My apologies for being pretty absent on social media lately but unfortunately my “blogging” life has to take a back seat to my main job. I wish it wasn’t the case – I would love to spend all day in the kitchen creating and testing recipes and writing fun blog posts to share with all of you. It’s definitely my passion and I hope to get there one of these days. Meal Plan 10/17 – 10/22
Sunday, October 17th | Best Ever Beef Ragu | Total Time: 2 hours 35 minutes | The weatherman says it’s supposed to cool down tomorrow and I’m here for it. I’ve tried and loved a million different beef ragu recipes but nothing wrong with trying one more especially one with “best ever” in the title. Simmer this one on low all day on the stove!
Monday, October 18th | Mediterranean Bowl with Salmon | Total Time: 42 minutes | I’m such a fan of “bowl” recipes because everyone gets to build their own which should mean less complaining. This salmon recipe is AWESOME for meal prep. Double for weekday salads. A few other things to help make it easier – purchase store-made tzatziki and if you have time make the quinoa salad on Sunday for a super easy Monday dinner!
Tuesday, October 19th | Pork Verde Enchiladas | Total Time: 10 hours, 55 minutes | Slow Cooker for the win. You can prep this one on Monday and cook all night or, prep the morning of and cook all day. Either way, you will be in heaven when you walk into the door to a big batch of yummy shredded pork.
Wednesday, October 20th | Chicken Bacon Ranch Sheet Pan Dinner | Total Time: 45 minutes | Sheet pan, deconstructed, healthy, and ranch-flavored – a win for parents and kids. Nothing complicated here just make sure you give your veggies and chicken space on the sheet pan – use two if necessary.
Thursday, October 21st | Quick Beef and Zucchini Skillet | Total Time: 35 minutes | Potatoes bake in the oven while you quickly cook the steak and zucchini on the stove. Kid Tip: Cook steak and zucchini separately then serve alongside the roasted potatoes.
Friday, October 22nd | Healthy Slow Cooker Chicken Tikka Masala | Total Time: 4 hours 20 minutes or 8 hours | There’s nothing better than walking into the door after a long week and having dinner ready to go. Bonus if it’s delicious. If your kids won’t come near this one just toss in a frozen pizza and call it a night.
