We had such a fun week celebrating Regan’s 13th birthday and we aren’t quite finished! This afternoon we are taking a few friends downtown to do some shopping, dinner, and dessert to wrap up the festivities.
My favorites from last week – the Greek Tuna Salad Stuffed Peppers and the Quinoa and Shrimp Paella! I’m going to whip up another “batch” of the tuna salad for lunch this week. What were your favorites?
Meal Plan 10/31 – 11/5
Sunday, October 31st | Instant Pot White Chili | Total Time: 30 minutes | I’m not sure about y’all but Halloween is always hectic at my house. My plan is to make this easy white chicken chili earlier in the day then transfer it to a pot on the stove and let simmer until my crew is ready to eat. The perfect “brew” to fill your goblin’s bellies.
Monday, November 1st | Baked Cod with Panko | Total Time: 22 minutes | Cod is such a great fish for families (aka picky eaters) because it is extremely mild. Top it with a little buttery panko and some parmesan cheese like in this recipe and you are golden! Just tell them it’s a big ‘ole fish stick.
Tuesday, November 2nd | Creamy Salsa Chicken Skillet | Total Time: 30 minutes | Salsa and sour cream turn boring chicken into a creamy, flavorful one-pot weeknight dish! A few thoughts – I never pound my chicken – I know it helps to speed along the cooking process but I find it to be such a chore. Instead, I’ll use my foolproof method of cooking chicken breasts! Serve over rice or as is!
Wednesday, November 3rd | Fall Sheet Pan Pork Tenderloin with Honey Balsamic Roasted Vegetables | Total Time: 35 minutes | I love the tangy and sweetness of a honey/balsamic mix and it pairs beautifully with pork tenderloin and roasted veggies. Feel free to sub your family’s favorites for the beets and parsnips if they won’t tolerate them. I think I will do new potatoes, brussels, and carrots!
Thursday, November 4th | Cheesy Baked Tortellini with Meat Sauce | Total Time: 25 minutes | This “recipe” is for all of you who say you don’t have time to cook or you stink at cooking. Store-bought tortellini mixed with your family’s favorite jar of pasta sauce, ground beef, and some cream cheese poured into a casserole dish and baked to perfection. Simple and crowd-pleasing.
Friday, November 5th | BBQ Chicken French Bread Pizza | Total Time: 20 minutes | A fun spin on your classic Friday pizza night! You can cut the french bread into smaller pieces and let everyone in your family customize their own. Get creative! Serve with a simple side salad.
