My sincere apologies this post is so late but Patrick and I got hit with a horrible case of food poisoning Friday evening and I just couldn’t find the energy to finish this week’s meal plan. I had also promised to start sharing my favorite Thanksgiving recipes with all of you last week but it never happened. Not to worry – I’m on it for this week. Each day I will share a yummy side recipe your family will love starting today with my creamy dreamy corn casserole recipe!
Meal Plan 11/14 – 11/19
Sunday, November 14th | Easy Chicken Coq au Vin | Total Time: 1 hour | English translation: “chicken cooked in wine.” A great Sunday comfort food recipe, the chicken and veggies cook in a dutch oven for about thirty minutes so most of the recipe time is hands-off.
Monday, November 15th | Orange Dijon Grilled Halibut | Total Time: 20 minutes | This quick and healthy halibut recipe might be my new go-to. Orange marmalade mixed with dijon mustard, lemon juice, white wine, and basil. The instructions call for you to grill this dish but I will cook on the stove-top. Serve with a side of asparagus and roasted potatoes. Kid Tip: top their fish pieces with a little panko mixed with parmesan, salt & pepper. Bake in the oven while you cook your fish stove-top.
Tuesday, November 16th | Instant Pot Garlic Parmesan Chicken Rice Soup | Total Time: 30 minutes | I love the few additions to this recipe that take it from a basic chicken soup to a kick a** garlic parmesan chicken soup! Kid Tip: leave out the spinach if your kids will have a fit something green is floating in their soup! Meal Prep Tip: cut your veggies and grate your cheese the night before!
Wednesday, November 17th | Mediterranean Steak Bowls | Total Time: 45 minutes | Bowls are the perfect option for complicated food families because they can be customized! A few things – I WILL NOT use skewers in this recipe. They are not necessary and way too time-consuming. Instead, I will broil my veggies in the oven while I cook my steak in a cast-iron skillet on the stove.
Thursday, November 18th | Braised Apple Cider Chicken Thighs | Total Time: 45 minutes | Apple cider vinegar might be my favorite ingredient in my pantry. The tang the ACV adds to recipes is dynamite. Chicken thighs ( you can sub breasts) cook in a mixture of apple cider vinegar, white vinegar, and apple cider along with garlic, onions, and raisins. Side note – I’m not a raisin fan so I will be omitting.
Friday, November 19th | Grilled Cheese Board | Total Time: 30 minutes | A fun option for family Fridays! Use a few different kinds of cheese, add some apples and potato chips to a large platter and call it a night. You can serve your favorite store-bought tomato soup if you are looking to get extra fancy!
