Following a weekly meal plan is the best way to cook healthier for your family, save time and money! Each week I share six easy, healthy, and family-friendly recipes to help you simplify feeding your family!
Last week I meal prepped the b Jesus out of the meal plan; I chopped, marinated, and cooked for hours to help make the transition back to work and school a little easier. What I learned – I don’t need to prep every recipe but having cut-up veggies in the fridge and having a few pre-cooked kid-friendly dinner options ready to be re-heated changed my life. Meal prepping the below saved my life this week:
- Sliced red bell peppers for snacking
- Greek yogurt ranch for dipping
- Cut cucumbers as a snack/dinner side for kids
- Pickled onions for lunch salads or to top on anything really
- Cooked pasta
- Cooked frozen meatballs
- Cooked bacon for salads or to top over veggies to make kid-friendly
- Hard boiled eggs as snack or for salads
- Marinated chicken
- Cooked a pre-marinated tenderloin for quick kid dinner
Doubling the Greek yogurt dip and the pickled onions will yield enough for two weeks.
Meal Plan 1/9 – 1/14
Sunday, January 9th | Award Winning Turkey Chili | Total Time: Crockpot – 6 hours or Stovetop – 30 minutes | It’s cold in Charleston – like legit cold y’all – which means it’s finally time to make the chili. I love this no-fuss lightened-up version. I will make it on the stove and simmer all day!
Monday, January 10th | Easy Honey Garlic Shrimp | Total Time: 20 minutes | The most popular shrimp recipe on Pinterest, this quick shrimp dish will leave everyone feeling satisfied! Serve with brown or cauli rice and your family’s favorite veggie. Meal Prep: you need to marinate shrimp for at least 15 minutes or up to 12 hours. If you have the time, make the marinade on Sunday for more flavor!
Tuesday, January 11th | Cheesy Mexican Skillet | Total Time: 20 minutes | All the yumminess of a taco, minus the shell! Kid Tip: omit the bell pepper and serve in taco shells!
Wednesday, January 12th | Thai Pork Salad with Cellophane Noodles | Total Time: 30 minutes | Holy flavor!! Ground pork is mixed with Chinese 5 spice, garlic, ginger, brown sugar, and jalapeno then tossed with cellophane noodles. This one is a keeper! Note: the recipe calls for habanero but I will be omitting it.
Thursday, January 13th | Garlic Herb Chicken and Asparagus Sheet Pan | Total Time: 30 minutes | Here is a great meal prep recipe. Cook this one earlier in the week and double for work lunches! Light and easy. I will not make the cauli rice from scratch; frozen cauli rice is my go-to.
Friday, January 14th | Balsamic Grilled Flank Steak Caprese | Total Time: 30 minutes (plus marinating time) | Balsamic, dijon, garlic and honey create a yummy marinade for this flank steak recipe. Tomatoes are charred until they burst then served over the sliced flank steak. Serve with a side salad, roasted potatoes or other roasted veggies.
