Meal Plan 2/6 – 2/11
Sunday, February 6th | Creamy Chicken Soup | Total Time: 45 minutes | Chicken soup is good for the soul, right? Not to mention it’s STILL cold in Charleston so Sunday soup sounds like a great idea. What makes this soup pop is the creaminess from a simple roux and the addition of fresh dill! I really think you guys are going to love this one.
Monday, February 7th | Chicken Sausage Zucchini Pasta Skillet | Total Time: 20 minutes | I just love a simple veggie pasta dish and bonus points if you can make it in one pan. Low in calories and points if you are following Weight Watchers. MEAL PREP – double for lunch! Would even be good cold.
Tuesday, February 8th | Fish Taco Bowls | Total Time: 30 minutes | I apologize as I think this website is a pain in the a** but I really dig the dressing for these simple and “clean” (what does that even mean?) fish bowls. I will use frozen corn or just omit it altogether and I probably won’t purchase cabbage. KID TIP: serve fish in a tortilla with a side of corn & beans!
Wednesday, February 9th | Bacon Avocado Chicken Salad with Lemon Vinaigrette | Total Time: 30 minutes | Can you ever go wrong with bacon, chicken, and avocado? I think not. You can sub a rotisserie chicken if you are short on time but I love the flavor of chicken cooked in the pan for this one. Use my fool-proof guide to cook the juiciest chicken – low and slow. KID TIP: my girls will tolerate anything with bacon on top. I will serve their chicken on the side.
Thursday, February 10th | Greek Lemon Chicken and Potatoes | Total Time: 1 hour | I have a slight obsession with Greek potatoes and these are pretty dang good. This recipe is presented like it’s complicated but it is anything but. When it comes right down to it, it’s chicken roasted in the oven for 45 minutes with potatoes in a lemony sauce. You can sub chicken breasts or boneless chicken thighs but you need to adjust your cook time. Personally, I love using all of the chicken pieces – adds so much flavor!
Friday, February 11th | Slow Cooker Chicken Tinga | Total Time: 1 – 3 hours | Isn’t there a movie with a line “Tinga, Tinga?” Am I making that up? If you aren’t familiar with chicken tinga you are going to love me after you make it. The absolute best chicken for tacos! Chicken tinga is chicken cooked in tomato sauce and chipotle peppers with a few other seasonings. It’s delicious. Put in tacos, on salads – options are endless!
