Life Lately
I had planned to briefly chat with y’all this week about my accepting a new job and how the first week of the Dukan Diet shook out but then I woke up and realized it was April 30th. On this day, seven years ago, I was driving to pick up flowers for Regan’s teacher when I received a panicked phone call saying my dad was missing. In an instant, my entire world shifted and I knew at that moment my life would never be the same. Hours later, we received the news my dad had taken his life.
Losing a loved one to suicide can bring along with it so many emotions beyond grief like anger and shame but I never felt either. All I felt was a deep, deep sadness. There isn’t a day that goes by where I don’t think about my dad but most days it’s a happy thought. But then there are days like today when I look at my girls, and I think to myself how proud my dad would be of them and how if he could have just asked for help he would be here to see the amazing young women they’ve grown up to be. And me. How proud he would be of me. On days like today, my dad’s loss hits just a little harder.
On days like today, I look back and wonder how I survived those initial hours and days after learning my dad was gone. How Patrick survived. And this might sound strange but there is peace in knowing my dad knew he could leave this earth in the way he did because Patrick and I were strong enough to survive this horrible tragedy together. He knew we would be OK.
Apologies for the heaviness today. Next week I’ll give a Dukan Diet update (it’s working) and talk about my new job!! Until then, hug your people a little harder today for me. My dad always gave the very best hugs!

Meal Plan 5/1 – 5/6
Sunday, May 1st | Instant Pot Italian Beef Sandwiches | Total Time: 55 minutes | I love sandwiches for supper – there’s just something silly about it! These hot beef sandwiches will melt in your mouth!
Monday, May 2nd | Sheet Pan BBQ Chicken Dinner | Total Time: 35 minutes | Holy everything in a sheet pan. Chicken, smoked sausage, zucchini, and corn – this recipe will satisfy everyone in your crew!
Tuesday, May 3rd | Summer Chipotle Chicken Cobb Salad | Total Time: 1 hour 10 minutes (marinade for 1 hour) Bacon, strawberries, sweet corn, avocado, and chipotle chicken all dressed with a yummy cilantro dressing. I dream about this salad. It’s heaven in a bowl.
Wednesday, May 4th | Hamburger and Zucchini Skillet | Total Time: 30 minutes | I love nothing more than a one-skillet supper on the table in under 30 minutes, start to finish. Ground beef cooked with tomatoes, bell peppers, zucchini, and brown rice. Healthy, delicious, and quick!
Thursday, May 5th | Hoisin Glazed Pork Chops | Total Time: 20 minutes | Hoisin is a sweet and tangy glaze used in Asian dishes. It’s just exciting enough to liven up boring pork chops!! Serve with grilled veggies!
Friday, May 6th | Sheet Pan Lemon Herb Tuna Steaks and Potatoes | Total Time: 30 minutes | Tuna steaks tossed in a tangy lemon marinade baked alongside potatoes. The perfect ending to a long week!
