Happy Summer y’all!!! Well, happy for some. This is the first summer I’ve had to work 8-hour days, all summer long, so I’m trying to figure out how to get my kids to camp, picked up from camp, carted to swim meets, and everything in between. I’m seriously struggling. Due to the summer craziness, I’ve decided to try something new with the meal plan. Let me know what you think!
What You Will Need This Week
Herbs | basil, parsley, cilantro
Fruit & Veggies | cherry tomatoes, garlic, lemon, romaine lettuce, red onion, poblano peppers, corn, lime, tomatoes, white onion
Meat | chicken breast, chicken wings, shrimp, salami, ham, rotisserie chicken
Dairy | butter, burrata cheese, mozzarella pearls, shredded mozzarella cheese, sour cream, shredded cheddar cheese
Dry Goods | spaghetti, crusty bread, pie crust
Pantry | olive oil, smoked paprika, salt, pepper, Italian seasoning, pine nuts, anchovy paste, red pepper flakes, white wine, clam juice, capers, chickpeas, pepperoncini, dijon mustard, red wine vinegar, sugar, dried oregano, dried parsley, tomatillo salsa, mayonnaise, hot sauce
Meal Prep | Grill additional chicken Sunday when making the chicken for the pasta and use for lunch.
Sunday, June 5th | Chicken Spaghetti with Burrata and Lemon Butter Garlic Sauce | Total Time: 50 minutes | I mean, the recipe title sells itself. I would eat leather if smothered in burrata and butter. PS – Burrata is a cow milk cheese made from mozzarella and cream! It’s amazing.
Monday, June 6th | Skinnytaste Drunken Shrimp | Total Time: 15 minutes | Healthy, salty goodness in a bowl. Shrimp cooked in white wine with tons of garlic and spices. Omit the red pepper if serving to your littles. Serve over pasta, with crusty bread, or eat as is.
Tuesday, June 7th | Salt and Pepper Chicken Wings | Total Time: 45 minutes | Your kids will love me for sharing this easy recipe and you will love me even more. SO simple. Serve with some roasted potatoes and a side salad.
Wednesday, June 8th | Italian Chopped Salad | Total Time: 30 minutes | This California Kitchen copycat salad is loaded with ham, salami, chickpeas, tomatoes, and basil. It’s out of this world!
Thursday, June 9th | Chicken and Corn Stuffed Chiles | Total Time: 40 minutes | Poblano peppers (not spicy) stuffed with a rotisserie chicken, corn, tomatillo salsa, and sour cream mix. Your new favorite stuffed peppers.
Friday, June 10th | Tomato Pie | Total Time: 1 hour | It’s time. Hit your local farmers market and pick up some fresh tomatoes this weekend then make your first tomato pie of the season friends!
