I’m back!! Thank you for being patient with me these last four weeks while I stepped away to try and survive the craziness of summer swim! Working late hours and having to go straight to swim meets about did me in. It was fun but it left absolutely zero time for me to research recipes, and create content to share with all of you!
While I’ve been “off” these past few weeks my lifestyle can best be described as livin la vida loca. It’s bad. Way too much drinking and eating and I need a serious re-set. Not meal planning means on-the-go eating which is never good for me because I’m a junk food attic at heart. I’m going to lighten it up this week and really focus on meal prep so healthy, whole foods are ready to go and at my fingertips.
Snacking is definitely my downfall. Below are a few healthy snacks I try to meal prep to keep me from eating a box of cheez its on the daily. I make sure to have a few on hand and switch it up the following week!
Turkey and hummus roll-ups | Ranch Dip ( sub greek yogurt) with veggies | Naval oranges | Pistachios | Wholly Guacamole cups | Edamame | Whisps | Low-fat pretzels | Vinegar marinated tomatoes & cucumbers
Side Note – y’all groceries are SO bloody expensive right now. The best way to save money on groceries is to have a plan for the week, stick to it, and order your groceries online. Less purchasing and less waste. Trust me!

Grocery List for the Week
Herbs | parsley, chives, green onion, cilantro, basil
Fruits & Veggies | asparagus, frozen peas, lemon, garlic, tomatoes, jalapenos, red onion, brussels sprouts, corn, avocado, tomatillos, green bell pepper, red bell peppers, onions, spinach, arugula, grape tomatoes, red onion
Meat | shrimp, chicken breasts, ground beef
Dairy | cotija cheese, full fat Greek yogurt, goat cheese, shredded Mexican cheese
Dry Goods | elbow macaroni pasta, quinoa, farro, brown rice
Pantry | sun-dried tomatoes, mayonnaise, dijon mustard, salt & pepper, olive oil, cajun seasoning, broth, rice vinegar, honey, sliced almonds, onion powder, cumin, chicken stock, soy sauce, ground ginger, garlic powder, taco seasoning, tomato sauce, green chiles, black beans, beef broth, vegetable broth, full fat coconut milk, quartered artichoke hearts, cornstarch, red pepper flakes
Sunday, July 17th | Lemon-Dijon Asparagus and Pea Macaroni Salad with Grilled Steak | Total Time: 30 minutes | Macaroni salad makes me think of going to Shoneys when I was a kid. God, I loved their overly mayo’d macaroni salad. This Lemon-Dijon veggie salad is nothing like the Shoney’s version. While it does have some mayo (you can sub Greek yogurt) it is loaded with fresh herbs and tangy flavors you will love! As for the steak, honestly, I’m going to see what’s on sale. Meal Prep: while the grill is hot, toss on chicken for this week’s recipes!!!
Monday, July 18th | Spicy Cajun Shrimp and Quinoa Skillet | Total Time: 30 minutes | A one-pan & healthy skillet recipe you are going to love. Kid Tip – sub salt & pepper for the cajun seasoning and just sprinkle the spice on your shrimp after serving.
Tuesday, July 19th | Mexican Brussels Sprouts Salad with Tomatillo Dressing| Total Time: 30 minutes | Pickled red onions, avocado, corn, and cotija cheese mixed with shaved brussels and topped with the most heavenly tomatillo dressing. This recipe isn’t difficult but it does require a few steps. If you are short on time you can purchase pre-shredded brussels and pre-made tomatillo salsa but the homemade version is to die for. Top with leftover grilled chicken from Sunday.
Wednesday, July 20th | Pepper Chicken Bake | Total Time: 25 minutes | I foresee this recipe becoming one of your rotation meals. It’s quick, healthy and even the kids will love it even if they complain about having to pick around the bell peppers.
Thursday, July 21st | Mexican Ground Beef Skillet | Total Time: 30 minutes | I made this last week and it was a huge hit in my house. The best part is the brown rice cooks in the pan with all of the other ingredients so you are only cleaning 1 dish tonight folks.
Friday, July 22nd | Spinach Artichoke Chicken Skillet | Total Time: 30 minutes | If you love spinach artichoke dip, you are going to be a huge fan of this dish. Most spinach artichoke recipes call for lots of sour cream and mayo but this gem subs coconut milk and it’s amazing. Note – this recipe is a keto recipe so it calls for arrowroot which is a substitute for cornstarch. I plan to just leave it out but if the sauce is super thin I will make a slurry – 1 tablespoon of cornstarch mixed with 2 tablespoons of water.
Lunch This Week – Leftover grilled chicken from Sunday and this BANANAS good salad – Creamy Goat Cheese Arugula Farro Salad
